Dear Tex, Vanessa, Starfire, Martha, and Marcia,
Thank you so much for all your good wishes and being such wonderful friends!!!
I had a lovely birthday
The day started with a relaxing massage (birthday gift from my sister), then a walk around a nearby lake with a friend and my dog, my best friend came over for lunch (I had cod, rice, and red beets for lunch). My birthday ended or with a lovely evening going out to dinner with my husband, my youngest daughter (who is a senior in high school) and her boyfriend. I had oysters for an appetizer, with a bit of lemon juice, and did not touch the sauces that came with them. For my main course I had lamb, sautéed potatoes, and spinach, prepared with my oil that I brought and salt and pepper. I had no problems whatsoever the next day. Yay!!!
I will say that I was queasy for most of my birthday and had several weird BMs. I am not sure, but I think they were caused by my coconut milk experiment a few days earlier. I had prepared a delicious ice cream (coconut milk, dates, espresso, vanilla extract, enjoy life chocolate chips). But like the previous time, I felt queasy two or three days later. I am not sure why the delay, why I would not feel it the next day. Overall, I have been feeling pretty good and started experimenting a bit. I had wild salmon from Trader Joe's (out of a can) a few weeks ago and did really well (my last salmon experiment was 2 years ago and did not go over well; but it had not been wild salmon the previous time), so I was happy about that. But I do not think coconut milk is the best thing for me, even though it would be really cool to be using it for all kinds of recipes....Oh well. It was worth a try!
My two older daughters are both in college in Maine and we will go visit them this coming week (my youngest daughter will have college interviews there). I am excited to see my daughters and I am also excited for fresh seafood!!!
Thanks again! You guys are the best!!
Love, Patricia

I just got back from Maine where we were visiting our two older daughters who are in school there. This time, we stayed in an AirBnB where we had just a room and a bathroom. There was a kitchenette (microwave, fridge), but no stove. We ate out for most of our meals, which made me a bit nervous. But all worked out really well. I had brought my own food for the long car ride up (700 miles) and my rice cooker, some potato chips (made in avocado oil), and the rice crackers Kari had recommended. For breakfast I always had hot rice and a banana. For lunch at the college I brought a Tupperware with cooked rice and a can of wild salmon. It was a very easy, convenient, and yummy lunch. For our other meals we would either go to a Japanese restaurant where I could have tuna sashimi with a bowl of white rice or seafood places. I absolutely love seafood. So I always enjoy being right on the coast with plenty of fresh scallops, oysters, and lobster. I would either eat my own crackers with the seafood if there were no sides available that sounded safe or I would bring a Tupperware with rice. For the way home I had bought a little bag of lobster meat at a fisherman's place. They gave me a little bag of ice, but obviously the ice melted rather quickly in the warm car. I certainly did not want my lobster to go bad. So when we stopped at a Starbucks I got a tea and also asked for a cup of ice. They were very nice and gave me a big cup of ice with a lid and I was able to put the little lobster bag into the ice cup and it remained nicely refrigerated until we stopped for lunch. I will definitely do this again, it was so easy.
Hope you are doing well

Happy belated birthday Patricia!!! So glad to hear your Maine trip worked out well. I vacationed in Maine many summers when I lived in NYC. We camped on the ocean on a little island called "Hermit Island" on the Phippsburg peninsula, south of Bath. Lots of happy memories, especially of the delicious seafood :). We went digging for muscles on the island, and cooked them up in a large pot at the campsite - yum!!! We also boiled lobsters at the campsite. I loved "lobster rolls" - that was when I could eat gluten :).
Anyhow, hope your girls are doing well - it sounds like you've got your own eating plan under control - good for you!!!
Love,
Kari

Thank you so much, Kari. I LOVE the Phippsburg area! In August, when I dropped off my oldest daughter (who had to be there earlier), we went on a short hike from Morse Mountain to Seawall Beach not far from Hermit Island. The area was beautiful! However, the mosquitoes were eating us up alive. Now in October, I only saw a single mosquito. So much better. This past Saturday we went to Popham Beach State Park (also close to Phippsburg) for the sunset. The mist rising over the ocean with the beautiful sunset colors was absolutely stunning. It is about an hour away from their school and they go hiking or surfing there with friends once in a while. Whenever I go visit them we run out of time to do all the things they want to do. I definitely want to spend more time on Popham Beach next time (probably in spring). Last year we stayed in an AirBnB on Orrs Island, which was such a beautiful place. This time, the AirBnB we stayed at was on Cousins Island, near Yarmouth. I just cannot get over the number of islands in Maine, many connected with the mainland by bridges. Many more not connected at all. It is such a beautiful place to visit. My youngest daughter is applying to college there right now....so I might have many more Maine trips coming up I will have to check out Hermit Island next time!
How was your trip to Norway? I hope everything went well for you!

Kari, the link worked. My heart goes out to you!! I am so sorry to hear about your two sisters with bone cancer. How sad! Living far apart makes it even harder.
