Grain toward which you displayed the least immunologic reactivity: Rice

Meats:
Meat toward which you displayed the most immunologic reactivity: Beef
Meat toward which you were next most immunologically reactive: Tuna

What were your individual scores on the 11 antigenic foods? Which ones were classified as 2+ and 3+? You obviously need to continue to avoid gluten, dairy, eggs, and soy.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.

Not perfect but now what?
Dont over think it. stick with the foods that settle the best
given the test results try less common proteins like duck, bison, venison etc

looking at your high gluten score result my suggestions are: -
- be super careful about cross contamination, ie sharing the kitchen with people who consume gluten products.
- consider getting new cookware, utensils, chopping boards that only you use for your cooking.
- double check shampoo, moisterisers, make up lipsticks etc and ensure there is no wheat germ, gluten, oatmeal, almond oils etc (also given your soy result be cautious of products with 'Vit E' and 99% of Vit E is soy based
- avoid processed 'gluten free foods' as much as possible. In the USA the level of gluten for a product to be classed at gluten free is 20 parts per million, regular consumption may be enough for you to react

hope this helps.
