Bread made with "ancient" gluten

Bread made with "ancient" gluten
Hi!
I just saw information on line about bread being made with 2ab wheat. Supposedly it is more gut-friendly than regular wheat. They claim it is made with ancient gluten as opposed to modern gluten currently in use. Your thoughts, please!

I've never tried any so this is just my opinion based on my reading.
I think that anyone sensitive to modern wheat will react to any "ancient" wheat, just at a lower level because it's protein level is lower than modern wheat varieties. By lower level reaction I mean it will probably take more of it to exceed your tolerance level (the level at which you begin to show clinical symptoms), but your immune system will recognize it as gluten immediately and begin to produce antibodies. It will take longer for your antibody level to build up to your lower tolerance limit so that you begin to react. But the damage will begin to accrue as soon as you begin to produce antibodies, not when you begin to show clinical symptoms (react).
These are just my thoughts. This issue is a lot like trying to decide if a small amount (a non-fatal dose) of poison is OK or, if we should avoid it because of the risk of a fatal overdose.

Another question:
I seem to be shedding more hair than usual. I wonder if it is related to inadequate nutrition. I am adhering to the Phase One diet and take a B6 tablet,3000units of Vit D and espom salts through foot baths and sprays every day. Should I be taking anything else?

You're not by any chance taking any form of mesalamine, a corticosteroid, a chemotherapy drug, or any other type of immune system suppressant, are you?

wheat / gluten has multiple proteins that cause inflammation.
having ancient grain bread does not remove this issue. having organic ancient grain bread may remove some of the chemicals and GMO issues related to consuming gluten, but not the core protein reactions.
further, it may be ancient grain but if it is processed by modern methods (and not time consuming traditional methods) and prepared and cooked in kitchens with current day gluten flours there is high high risk of contamination and minimal chance of 'benefit' to your gut
in many cases it is a marketing con, to get people who are concerned about the impact of gluten, but not ready to be 100% gluten free to buy the product.

Julie, I lost a lot of hair, too but once my gut healed the hair loss stopped. I take Dr's Best Magnesium Glycinate in addition to the D3.
