Tigernut Flour

Hello. Has anyone tried tigernut flour? It seems to be the latest among paleo/AIP. I don't bake often but was curious if anyone had success with this flour.

I have started baking some, but have not heard of it either. I stick to almond flour and coconut flour right now.

According to Google a tigernut is a small root vegetable that grows in N. Africa & the Mediterranean. The flour offers those allergic to nuts an option for adding protein when baking & cooking. I'm always afraid to try anything new because I don't want to upset the apple cart! I think I'll hold off. Thanks, Gabes & Jari.

For those of you that have egg allergies, what types of things are you making? I haven't attempted baking yet but have started gathering recipes. It looks like some of them could use flax eggs. I have been searching for places to buy duck eggs but haven't found any yet. Pre MC, baking was my hobby and I do miss it. Of course, I know that I should be careful with sugar, especially as I'm still fairly new with all of this.

For the longest time, I used Ener-G brand Egg Replacer and it did just fine. I can use eggs in my cooking now with no problems.

Jari, do you still stay away from eating eggs on a regular basis and then just enjoy them once in awhile with baked goods? It's nice to think that could be a possibility someday!

Pam,

I've never really been fond of eggs so not hard to stay away from them, so don't know how I would do if I'd try one now (like boiled or fried egg sandwich), but I have no problems with them in baked goods now. I did stay away from them for quite awhile before trying them again in baked goods. And I don't eat them regularly in baked goods as a whole, but the bread I eat now does have eggs in them and I eat that pretty regularly with no issues.

I do flax or chia eggs.
I also search for eggless paleo baking recipes.

I was eating duck eggs for awhile and doing fine until my duck guy disappeared. So now I'm ordering quail eggs on line and loving them. They taste better than duck, but are so small you need many to do any serious baking. Not to mention expensive too. But they work! That's the important part, isn't it ? I do mostly use them for my personal pleasure (because of cost) so I can have bacon and eggs for breakfast. I order like 150 at a time and they last for more than a month. (5 quails equals one chicken).

I just this week found a local source for quail eggs at one of our local Asian markets that are cheaper, but he doesn't always have them. The funny thing about that discovery......
He also had duck eggs and I bought a 2 dozen thinking I was going to do some serious baking. Well, got home and cracked one.....it was a fertilized egg. Okay, no prob. Cracked another... fertilized.... did this four more times. YUCK! Okay, this is a trend obviously and I went back with the rest and he traded me for quail eggs thank goodness. He had a good laugh at my distress!

I'm too chicken (no pun intended) to try chicken eggs right now because the last time I did it took several days to recover from that experience. Just a little FYI. :wave:
