I just got back from a 2 week trip to Florida for Christmas. I drove my best friend's mom down all the way to Naples and back. We were on the road 3 days both coming and going and then add another day on each end for my travel to and from my house to pick her up and drop her off. I had packed a lot of stuff. Took my big cooler with lots of snacks, protein, etc., and my sausage for each morning. Each night when we stopped at a motel, I would get 2 large baggies and fill with ice to keep everything cool and/or frozen. We managed to find great places that I could eat (only twice did we have to drive around for about an hour before we found something). Since I can eat beef, I ate a lot of plain hamburgers wrapped in lettuce, and we stopped at a couple of Cracker Barrels and I had a plain hamburger and a plain baked potato (I took my coconut oil). I can eat the bacon and French fries at IHop and we stopped there a couple of times when we saw them.
We went to Costco when we got there and bought a ham. I also fixed a roast and potatoes in the crockpot. We went to another home for Christmas Eve (but they're just like family) and I had already told them it wasn't personal but I would bring my own food. I had no problems at all.
I consider my trip a huge hurdle that I crossed and very successful. I've made trips but nothing like this! We had a great time, and other than getting really tired, I did absolutely great!
