Tuna and Black Rice salad

Tuna and Black Rice salad - Great for lunches

1 cup prepared black rice
Pink sea salt
1 95g tin tuna
12 green beans
2 tbsp olive oil
1 tbsp apple cider vinegar

1.Prepare at least one cup of uncooked black rice.
Note: I prefer my rice a bit wetter so I will add extra water (e.g. if the cooking instructions say 1 cup of rice to 1 1/2 cup for water, I would add 1 cup of rice to 2 cups of water).
2.Top and tail green beans and steam until tender. Just make sure they are well cooked.
3.Mix the cooked black rice, pink sea salt, 1 x 95g tuna in springwater (with juice), the green beans and a small splash of good quality olive oil in a bowl and a splash of apple cider vinegar.


Notes:
You can add any of your other favourite ingredients that you can tolerate e.g. eggs, other cooked vegetables (squash), finely ground herbs.

Black rice is higher in fibre and can be substituted for normal white rice during stage 1 eating. Black rice has a nutty taste.
