Busy Cooking
I decided that before it gets too hot, I am gong to cook a bit each day. Today I made Enchilada Casserole and Spanish rice. As soon as it cools, I am going to dish it up into single servings and freeze. I am going to do that with: Chili, Tator Tot Casserole, Stew, etc. All with deer meat I already have. That way we can pull out a meal and stick it in the microwave oven. If Mike wants Chili and I want a casserole we can do it. Going to make potatoe soup/with Ham, and a few other good thing to eat. And Instead of wasting Cold Cuts, I have packaged 2-4 slices in a package and freeze them. I just felt Like I had extra energy today. Maybe it's the Natural Calm Celia! I had that canister of Natural calm in the cupboard (forgot about it) But am using it now (4th Day). Anyway Have a great afternoon. Love Oma

wow OMA-----energy plus----maybe I should take some of that stuff~~
I do that with cold cuts(I only use low sodium turkey) buy a pound and the guy splits them in 1/2 and I freeze one pack
This way I am not running to the store all the time--
I would do that freezing cooking thing----comes in handy--

Hi Oma. I freeze a fair bit of food too. Even ham freezes Ok for a very short time. I love ham on the bone but unless we have a lot of visitors to help eat it you get sick of it after a while. So I freeze some & it is good to put in pea, pumpkin or potato soup, for sandwiches & especially for quiches. I am making some pumpkin soup again today. I put lemon grass, fennel & a little garlic & chilli in it to give it a bit of wham. Delicious.
It is raining here today so is a good day for cooking. We have had a low off the coast causing high winds & rain but unfortunately it has not rained in the dam catchment areas so we still have water restrictions.

Liz...I use Lemon Grass and fennel too. I have alot of herb I use like that. I went into my pantry, had all the ingredients I needed there and my freezer (all dishes made with Deer, except ham, and that needed to be cooked.
So far I have cooked and frozen In individual packets:
Tator Tot Casserole
Spaghetti
1 small bone in ham
Enchalada casserole
Beans and Ham
Deer Stew
Potato and Ham Casserole.
It's going to go from this so called Winter to Caliente real soon. I think we will skip spring and I don't want to cook and heat up a small kitchen area.
