Vegetables and Histamine

Hi All,

I should probably know this but I don’t ~ do cooked vegetables develop histamine if they sit in the fridge as leftovers? I’ve only been eating them the day I cook them but would love to eat the leftovers. We usually steam fresh veggies.

I think this is an unresearched topic, but IMO vegetables in general are not histamine risks in the same class with chicken, fish, etc. That said, if any mold development should occur during storage (even if it's not visible) histamine levels would surely climb. I can't think of any examples of vegetables that might pose a possible histamine risk, but maybe someone else has some better insight on this topic.

Hello - can you tell me if histamines are in leftover chicken or home made chicken soup? Are they in any leftovers - (except the veggies(?

I have never had histamine issues with leftover veges, so long as I reheat them to high temp when consuming them.

yes chicken is high risk for histamine when cooked then stored. (and this does apply to soups as well)

for quite a few people here, high histamine is only an issue in the early stages of healing. once the gut has healed and you have good levels of magnesium and B6 in the body (B6 and magnesium moderate histamine levels) then it is possible to have reheated chicken.

Hi BarbieAnn,

From what I understand, chicken develops histamine rather quickly. I have been freezing my leftovers in little containers. I can eat rice so I add a little jasmine rice to it and it makes a nice quick meal. I sometimes eat it for breakfast!

soup wise, if you freeze it in meal portion size quickly after preparation and then when going to consume, it is defrosted and reheated within 24 hours then it will have reduced histamine compared to being stored in fridge for over 24 hours... (does this make sense)

I am doing really well.

Last weekend I was away for a 4 day weekend - my first time flying interstate in over 5.5 years. I ate out alot and it was very hot and humid.
I came home with slightly unsettled digestion and a bit tired, but 4 days later I had recovered from the adventures!
Managed to work a 40 hour week and still recover. (hence why I have been a bit quiet on the PP forum this week)

the hard work of the past 3 years to optimise wellness has been soo worth it!

Thank you - yes Gabes it makes sense to me about the leftover chicken soup. Now I know why I sometimes suffer after eating 2 days of leftovers. I think I am doing a good thing by eating the same thing day after day, not realizing that the leftovers is not a good idea!
