Hi Marie-Claire,

Welcome to the group. I agree with Brandy. Get to remission first — worry about nutrition issues later. According to my research, the primary cause of type 2 diabetes is probably chronic magnesium deficiency. Microscopic colitis interferes with magnesium and vitamin D absorption, so most MC patients have a vitamin D and magnesium deficiency. That's why we recommend taking magnesium and vitamin D supplements to boost the immune system and improve our healing ability.

Hi Tex

Thank you for welcoming me and for your good advise! I ordered the tests from EnteroLab which will give me a better idea of what I need to do to get this under control. I appreciate any advise from MC sufferers who have more experience than I. Tex, just looking at the list of your food intolerances I wonder what is left to eat? This is overwhelming!!

Luckily, I'm not sensitive to eggs, so I can eat eggs and bacon for breakfast. Other than that, I live mostly on pork (usually in the form of sausage) and potatoes.

Marie-Claire,

Early on I ate turkey or beef with white rice for every meal. Sometimes I would eat grilled fish, cooked dry. I could also eat bananas. Is there a protein that seems safe for you - a lot of people can eat turkey. I could also eat beef and salmon without problems. I found it easiest to make a large pot of white rice and cook up some protein. Sometimes, I would buy turkey cutlet but often I would buy ground turkey or ground beef as it was less expensive. I would mix the meat and rice together and then freeze individual portions so I would have plenty of meals for the week. You may want to reado some of the posts or in Tex's book about histamines. Many of us have problems with histamines, which can develop in food as it sits in the refrigerator as leftovers. That's why it's a good idea to freeze the portions rather than just have them in the refrigerator. After I started to eat safe foods, my weight loss leveled off and then as I started to heal, I have gained some weight back. I didn't try to do too much else food-wise for the first few months. I did have a vacation planned with my daughter to New York City and had to eat out. I did well eating salmon (cooked dry - no butter, no gluten) and a plain baked potato.

Pam, I do the same thing, except the freezing. I was doing that, but went through them so quick, I just refrigerate. Guess I should go back to freezing. My crock pot and rice cooker are on the counter and use them extensively, in fact that's all I use.

I will go back to freezing portions, let them cool first? I wasn't doing that.

I've had recent, including last night, nocturnal incontinence. I recently returned from a trip to CA from NC. 2 things come to mind...could my body just be letting down from the anxiety of traveling and eating, which went well by the way and/or the histamine effect?

Say Terry,

On the cooking rice and freezing....from a foodservice point of view make sure it is less than 2" of product then let it steam off and cool for a bit then you can put it in the freezer. Rice and beans tend to stay warmer in the middle for a longer period of time especially if they get covered up right away and placed in a cooler or freezer creating a spawning ground for bacteria. If your food ever creates a moisture residue on the lid then you have potential for it to not have cooled down correctly and it may acquire bacteria, hence a gateway for food poisoning.

Just saying....I've taken the food handler card test so many times working where I do, I have practically memorized it :shock: With as delicate as our guts are at this point I'm not a fan of letting my food give me fits too.

Also....YES the traveling could totally be giving you some out of sorts bathroom trips.

Hi Terry,

Just a note to say that I hope you’re feeling better. I would think that a trip could throw you off a little so I hope that now that you’re home, things have settled down. After a few months, when you travel again you will be able to have more travel friendly foods with you ~ maybe almond butter and rice cakes if you can eat almonds and rice.

I have my children, High School and college aged (Home during summer) and husband who eat differently than I do. I have actually come to enjoy my little frozen meals. I can make them dinner and if it’s not a good choice for me, I have a nice meal to enjoy. I have just started to have a lettuce salad (with a little balsamic vinegar drizzle on it) and more vegetables with my meal.

Thanks Erica and Pam!

I definitely need to freeze my portions again after cooling.

I developed a rash on my back a couple weeks ago, I'm sure a histamine effect.

Ended up with Rice Chex on the plane, since I left food at the Hotel :roll:
