Long story short....
Mother in law has a history of the MTHFR genes both of them....has had diabetes for 25 years....could never get her A1C or triglycerides in check they continuously rose over the years and have been around 10 for along time....
Last November her labs said she was at a 10.1, A1C and yesterday she had labs done because she is getting pre authorized for an insulin pump through Medicare and her A1C is 8.3
Her Dr asked her what she has been doing differently since then and she said she had her daughter-in-law to thank for it because she was helping her to eat differently and to take specific supplements that target her disability. She also has been diagnosed with colitis not sure which one I think it was CC. Her Dr said to give me lots of kudos because she had never seen such a drop in an A1C like this ever in her practice of 20 years!
Anyway, this is huge, and I felt like this site just got a ginormous compliment from all the research it has shared and has allowed us to bring out into our communities. It felt like such a success story come true for all the hard work I have been doing for myself and then to see it carry over onto another family member I feel really grateful.
Thank you to every person who has contributed here!

Erica,
Gotta add my kudos! Good for you for convincing her to change her diet. That was really impressive.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
Thank you Tex,
She is attending some sessions on how to eat (counting carbs) and use the insulin pump. I reminded her to not get confused if they tell her it is ok to eat something but her colitis Dx tells her she should be eating something else so as to not set off a flare. I told her not to many dietitians understand the MC/LC diet yet and if this one does then Super! but if not it is ok to take in the information and rearrange it to fit her livelihood. Carbs are carbs and colitis dictates which ones we can safely eat!
I plan to read what she is given so I can help her create a plan for herself moving forward.
I'm game for additions and subtractions as long as it doesn't upset her apple cart
