You are speaking a lot about Gas now....
No Dairy.....period.....you have a diagnosis of LC now, you can't break the Casein protein in any dairy down now, and perhaps never. If I get any dairy it gives me bloating and gas every time and I have been on a strict diet for 3 years now.
I feel your struggle when it comes to how you may have grown up and relied on BAKED goods as a means of eating. This is tough because too many baked items can give lots of gas, grains are hard to digest, the butter which is dairy is a no-no now, and the sugar that is added to baked items whether it is cane or a fruit all contributes to GAS. There is not much health benefit to a baked item unless you can make it with, a butter substitute like Earthbalance, or Melt, a grain substitute like Almond/Coconut flours and enough protein (nut butters, chicken eggs-which you might be reacting to at this time). I use Duck Eggs and you might be able to eat these also.
I'm sorry your country (or maybe it is yourself based on what your Dr is telling you) that you do not believe in the HCL Betaine, as it has helped me a lot and if your foods are fermenting at all in your stomach then you seriously need to consider how you are going to increase your stomach acid so you can help your body digest your food. This leads to constipation by the way...if you can not break down your food well enough the intestines sure aren't going to be able to do this as they are having a hard time as it is with the LC so you could use the extra acid at this time.
Also if you are giving yourself good doses of Magnesium and VitD3 daily this will help with many things going on within your body, such as brain fog, muscle weakness, constipation, relaxing the muscles everywhere and this is important when it comes to migraines, it is a proven fact from the National Institute of Health that those of us that have migraines NEED Magnesium very badly. I can attest to this as I have had migraines since I was 16 years old and I am 50 now, and I rarely get them since beginning my magnesium protocol. IT WORKS If I over do it now days and I start to get a glimmer of a headache I will up my magnesium and usually use some external lotion and rub it on my face, neck and shoulders at least 2 times a day plus take my internal magnesium!
Ares, we are all different and we all comes from different cultures and backgrounds, but one thing is clear....we didn't ask for this Colitis but we all have had to make major DIET changes in order to heal and it comes down to mostly how I posted above. I'm so sorry if you are butting heads with yourself on how you should approach this and also because you trust your Doctors too, I get it that you are torn as to how to proceed right now. One thing I do know is the DIET WORKS, I hope you trust what we have all been saying enough to give it a try.

thanks but: the apple makes me Gas It is the fruit with the lowest histamine level but at the highest level of fructose and saccharose. The worst raisins have a high level of histamine and fructose nuts do not eat because they have a high level of histamine! I speak of histamine but in reality. in 20 years with cefaleachronic I had to eliminate foods due to headaches crisis! I have been chronically ill for a long time so I gave up normal foods and lifestyles! it is not the limits of the colitis that frighten me but the thinness and the weakness and the headache! I eat every now and then for saturation crisis from chicken and zucchini a sweet almond and flour without gluten eggs and sugar and cocoa, but it makes me headache! I think it's the highest level of histamine cocoa and almond high level of histamine! twice I bought peanut butter and twice headache crisis 100%! milk with almonds I think is high in histamine in addition to the presence of gum and other substances! as far as gluten-free flours are concerned. from: Corn, Rice, and sometimes Soybean, in addition to sugar and in some flours there is guar gum xanthan gum tapioca starch buckwheat flour and mustard substances that I do not know if they are good for the colon but sure they make a lot of gas ! yesterday I risked going to the emergency room for hints of fainting with normal pressure and normal heartbeat! without having eaten different things! I think it's the head !!!

I’m afraid you need to stay away from the dried fruits and nuts for now.
Almond or coconut milk should be ok no matter what you think in regards to histamine in the nut milks they will be fine.
Also just pick 1 protein and one or two safe vegetables that you know you can eat over an over and start doing this until your symptoms stop.
Other than this advice I’ve ran out of help options for you as I’ve given you an broad breakdown of how to begin your healing journey.

Agree 100%.Also just pick 1 protein and one or two safe vegetables that you know you can eat over an over and start doing this until your symptoms stop.
The reality is you have got to eat to live. Almost all of us get fatigue, headache, gas and mucous early on. Pick the least
bad foods and stick with them.
Pick the foods that cause the least problems and stick with them. You should see improvements in several months.
I have good luck with chestnut flour. This is inexpensive and readily available in Italy. In the US it is hard to find.

Early on I could tell rice was problematic for me. It caused pretty extreme dizziness. It probably caused gas too. I had
to eat rice and potatoes early on just to get enough calories to live even though they caused dizziness. After I healed

thanks Erica for the advice, unfortunately, every food that has sugar or starch creates gas problems! I would really like to understand that they are not tantrums but they are really real effects!
Thanks Brandy but the thing that scares me is gluten-free food makes me more gas! I do not know if it's because it's corn or sugars! but between a normal pasta and a gluten-free pasta I have more gas with the gluten-free one! I'm trying to eat potatoes for a bit of calories and carbohydrates! soon. I will try the rice but no joke makes me constipation and gas! especially when I ate the galletted rice (as I eat it not even a minute I make gas, as if I had no gut but a tube straight between throat and ......) for the meat I was told by the doctor that my values have passed very low limit to take the statin! try to walk and reduce the meat a little, because the cholesterol is in the meat and not in the fat of the meat there are triglycerides! as I said I do not eat a palm of meat I eat more than one whole chicken breast a day or six thighs a day of chicken! thanks for the patience and help I try the milk of almond and try to find it without gum but here the choice is not as wide as you! is now starting this type of sale both as a result of celiac disease and for a Bio vision!

Maybe it’s too soon in your healing to try something like this....I think C is even worse then D, and I know how uncomfortable it is....ruins your day.
But, I needed some fiber after about a year of healing because I swing from C to D.
I don’t think berries are high in histamines.
