3 1/2 yrs healing...did a chicken egg test
I finally decided after having decent Normans for a strong month that I wanted to see where my body stood with chicken eggs....so I did a 3 day test just recently and scrambled an egg and put in on safe toasted GF bread with Veganaise and sea salt and ate a sandwich like that for 3 lunches....
My reporting is.....I think I can tolerate chicken egg now! I did not have loose stool, I did not get a runny nose, I did not have any gut pain. I also have to say that during the last year I have been eating GF bread that said it contained egg....but I'm sure it was in a much less amount than this experiment and by eating a full egg for 3 days I would suspect my tolerance level would have expressed itself by now.
Chicken meat is still a maybe....but I think a lot has to do with how it is processed at this point because the meat can still give me loose stool but it is literally a CRAP shoot after eating it. I never know if the chicken is clean or not in the sense of reactions.

That great, eggs have been a staple for last decade. I raise my own chickens for fresh yard eggs. Now I am unsure what I can eat...seems I have whole new set of symptoms. Maybe just start plain eggs alone see how goes. Have any other suggestions..

Hi Selah, If you have chickens are you able to raise a couple ducks? I have been doing ok with duck eggs, and more forum members seem to tolerate them much better than chicken eggs while they are healing. I'm not sure if I will be able to eat full chicken eggs on a daily basis, but it is encouraging to know that baked into something safe should not cause problems moving forward for me.

That's great, Erica! I haven't tried eggs yet, although I have baked with them and didn't have any issues. I'd love to try an egg sandwich. I'm trying to located duck eggs. What brand of gf bread do you eat?

I have been using Canyon Bakehouse for a few months now, and have tried 2-3 of their varieties and have stuck with Mountain White and Ancient grain. I don't eat it every day, but it toasts well and I can eat it in sandwich form without it being so ginormous taking a bite, lol.

Thanks, Erica. I don't eat bread very often either, but I just bought my own toaster and I've been itching to have toast for the first time in 5 years. I think my local Wal-Mart carries Canyon Bakehouse. Thanks!

Hello 3rd attempt at replying...great idea on ducks! I am going to get some ducklings tomorrow. I used to have 2 pair and loved their eggs!! Bears are real problem up here in mtns. That time approaching when they are back!!! Killed all my critters few years ago. I even raised some pigs cuz meat seemed to agree with the U C. But now this is very diff this diarrhea non stop and nausea, my colonoscopy show Ulcerative Colitis was in remission but my GI doc was a stout enough to take 16 biopsies on each side. Never would have known about Microscopic Colitis and just wonder how many others have been diagnosed with a 2nd IBD...
I am so bummed, my husband 10 weeks post op open heart and diagnosed early cirrhosis we are 59. No warning or symptoms all genetic for him...really sucks. Both just kind of numb, never left his side while he was in hospital for 2 weeks. The LC hit me 2 days after leaving hospital, 8 weeks later me colonoscopy and then hello LC.
I know feeling sorry for myself, been hell with UC these last 10 years and 4 heart ablations, was just getting it together. Almost losing my hubby, full moon... feeling lost. Not many people here in mtns and internet is terrible so sorry am venting.
I will continue to read all I can and am very thankful found you guys

No need to apologize for venting, this is a good place to do it. We all understand, and most of us have been there. I hope the health issues let up for a while — for both of you.
Meat is good for LC, also, as long as we're not sensitive to the type of meat we're eating. Some of us are sensitive to pork or beef. Some of us react to chicken, but virtually no one has a problem with turkey or lamb, or wild type meats such as venison, duck, goose, pheasant, rabbit, etc. It takes a lot of protein to heal the intestines, and meat is one of the best sources of protein. It's the only food that contains all the essential amino acids needed for good health.
