Coconut milk

I’m still awaiting my test results from Enterolab. I’ve eliminated all dairy and eggs from my diet among many other things. My diet consists of mainly ground turkey, chicken, rice, some veggies and some fruit. My question is if any of you have found you’re able to tolerate coconut milk. I’m talking about the pure coconut milk in the can, no gums or anything else added. I’m still healing, but tempted to try a small amount to add a little bit more variety to my diet.

I didn't have it early on but I did have coconut oil. I think coconut milk is a good option due to the high caloric content.
(without the gums)

Thanks for your reply Brandy! Yes, one of the reasons I want to try it is exactly as you say: calorie content. Also, I really like it!! :) I hope I can tolerate it while healing. I don’t want to irritate my intestines right now. I’ve been mostly steadily improving, but had a rough day yesterday for a reason that completely eludes me.

Yes, I have absolutely been able to tolerate coconut milk and it is now the only milk substitute I use. I have given up actually drinking milk, but I use the coconut milk on cereal, baking, etc.

I use the SO DELICIOUS brand. They come in a one quart cardboard container with a very long shelf life. It is not inexpensive, but so worth it for me.

Be sure to shake the heck out of it though before using it or you will get more solid flakes of coconut than you may like!

To be fair, I was able to tolerate almond milk as well but I simply preferred the taste of coconut milk.

Thank you for your input tommyboywalker!! I've always enjoyed coconut milk, and always thought I tolerated it well, but it was one of the things I eliminated while trying to get this under control. I am on such a basic diet right now and would love to add this. I think I'll try a little. I feel more confident knowing some are able to tolerate. I realize we're all different, but general comparisons are sure helpful. BTW, I use Native Forest brand, Organic Simple No Guar. It's just coconut and filtered water. Sounds similar to what you use.
