Some Very Promising Research has Recently Been Published
The May issue of the scientific journal Nutrients contains a most interesting research article, titled Dietary Walnut Supplementation Alters Mucosal Metabolite Profiles During DSS-Induced Colonic Ulceration.

What the researchers were trying to say with that (as usual) unnecessarily complex choice of words, was that they have discovered and documented evidence that a significant amount of walnut in the diet (of mice) is protective against lab-induced colitis, and it also enhances intestinal healing and recovery. You can read the article yourself at the above link, or you can read Science Daily's interpretation of the research at the link below. But the gist of the research indicates that a relatively large amount (up to 14 %) of walnut in the diet (of mice) not only resists lab-induced colonic inflammation, but it will almost completely heal the damage to the mucosal surface in a matter of a few days. That's quite impressive, to say the least. This could prove to be a very important discovery for IBD patients, including MC patients.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.

Oh, I wonder if making walnut milk would be beneficial then, as there is no way I could handle the fibre of any nuts right now!! Then again, I've never been a fan of walnuts, but perhaps that is because often you get rancid ones here, having come so far and been packaged for so long. Yuck! I might try making some and see how I go! Will be a nice change to almond milk in my rooibos tea.
