I make the recipe at the top of the thread including the honey. I make it exactly as called for. They turn out well.
The 2-1/2 c of almond flour is probably a bit much. I could get by with 2 cups.
When I take them on airplanes I bake them longer to make them extra firm. As a rule crumbling is not an issue on recipe at top of thread.

Sheila’s Paleo Muffins recipe...questions
Hi, Jari -
Want to try Sheila’s Paleo Muffin recipe...read the various suggestions here for additional moisture, etc but I didn’t see any place where the temp, time, use cupcake liners or plain oiled muffin tin, how many does this make, fill cups 2/3 full or how full? Can you help me w/ these questions? Thanks!

Here is the original post and you might want to read through it also:

350 degrees and I always use cupcake liners and then I freeze them. Fill about 2/3 full and check them in 20 minutes. May take a few minutes longer than that. I use less coconut flour now as it's harder for me to get now than it was. I only use 2 cups of flour period. That's enough. I add a little extra coconut oil and a little extra banana.
Hope that helps. Let me know if you have any questions!

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
