Help with Enterolab results and diet.

Enterolab test results:

Quantitative Microscopic Fecal Fat Score 337 Units (Normal Range is less than 300 Units)

Fecal Anti-gliadin IgA 87 Units (Normal Range is less than 10 Units)

Fecal Anti-casein (cow’s milk) IgA 17 Units (Normal Range is less than 10 Units)

Fecal Anti-ovalbumin (chicken egg) IgA 70 Units (Normal Range is less than 10 Units)

Fecal Anti-soy IgA 64 Units (Normal Range is less than 10 Units)

Mean Value 11 Antigenic Foods 15 Units (Normal Range is less than 10 Units)

+3 oat, almond
+2 corn, tuna
+1 rice chicken, beef, walnut
0 pork, cashew, potato

Background:
Diagnosed in 2016 & followed SCD diet. Since Jan, 2019 on Paleo diet.
Have been on Entocort since July 2017 but only on 3 mg/day for last year. Have never had any remission that lasted more than a few days. Did blood test for IgA antibodies per recommendation & tested OK to do Enterolab test.
Now plan to go egg free & try to figure out contamination sources for rest. Have some good idea from reading Wayne Persky's book.

-what is a safe diet going forward so I can get enough protein? Do I have to just eat pork, potato & cashew milk til I get into remission? The interpretation indicated not to cut out all... but how to proceed?

-does reacting to tuna include all fish?

-would love to taper off entocort. IYO would it be better to start now or wait and see if I can get into remission with diet?

Also is there a link to a page on how to use this forum?

That's basically what I did. Meat contains all the amino acids essential for good health. Humans do not need carbs in their diet — only protein and fat. So eat fatty meat. You can follow the guidelines posted at the link below:

No, but it probably includes fish like salmon.

Thank you so much for your help Tex. And thanks for the link to Gabes Stage One eating plan. I was feeling very overwhelmed but can see a way forward now. You all do a wonderful job of providing helpful information.
