Einkorn - An Ancient Grain

A friend of mine sent me the following link for Whole Grain Einkorn Flour Pancake Mix asking if this is something safe for me to eat. Because it does contain gluten I told her it wouldn't be a safe food for me. In the link it tells of the history of Einkorn grain. I found this to be an interesting read because of the history and characteristics of this grain.

I'm not trying to promote this product, but am asking your thoughts on Einkorn grain (ancient grain), or if anyone here has ever heard of it.

Hi Paula, I have followed this for a while and it interests me too. I have heard that people who travel in Europe and eat pasta have fewer issues than when in the US. It makes sense it has to have something to do with the flour. I am too scared to try it though. Take care. Deb

A couple of years ago (a year after I had the stroke), I was still relearning how to use a keyboard and mouse. I thought that a good way to get some practice would be to write a book. So I wrote a book called From Einkorn Wheat to GMO. It included a brief history of wheat. Basically, Einkorn wheat is a primitive predecessor that gave us modern wheat. As such, it contains a weak form of gluten that slowly attacks the small intestinal villi of celiacs. Modern wheat contains a much, much more potent form of gluten.

IOW, Einkorn wheat is a watered-down version of a toxic material for us. To understand the implications of this, consider an example. Arsenic is toxic, yet we seem to be able to tolerate small amounts of it. So how much arsenic could we tolerate before it begins to make us sick? How much arsenic could we tolerate before it kills us? Good questions, but I'm not interested in finding out the answers.

If you're interested in reading about how Einkorn wheat gave us modern wheat (through the eyes of an MC patient, rather than someone selling Einkorn wheat), I'll be happy to email you a quote from the book describing the role that Einkorn wheat played in the evolution of modern wheat. The quote is only about 4-1/2 pages long, including about four or five pictures and illustrations. I wouldn't even need your email address, because I can get that from your post. The offer is open to anyone who might be interested.

Deb - That's one of the reasons I was curious about this wheat because I've also heard that people who traveled to Europe had little to no issues when eating wheat products while there in comparison to wheat products in the U.S.

Tex - I am interested in reading the information you're offering. I went to Amazon and was able to find your book on this topic, but it says it is currently not available. Thank you.

I'm surprised that Amazon even lists it at all. I think I originally published it when I finished it but then i withdrew if from the market because no one was buying it anyway. It's a fairly unusual book (at least for me).

I'd like the quote from your book. My husband, who is gluten intolerant due to headaches, bought Jovial brand Einkorn flour and cookies and has been tolerating them fine. He and his mother (also gluten intolerant with ME) made their own pizzas with it and both were fine. Neither has celiac genetics, I do.

I tried my first slice of DF Einkorn pizza dough last week and was totally fine. No bloating or pain, my usual D later. I was surprised. But your language above makes me think it's not a good idea for me, even though it might be perfectly fine for them.

But now my husband is stocking up on every Einkorn product known to man and talking about buying an outdoor pizza oven! Clearly he missed normal pizza! :lol:

Sure, I'll email you a PDF copy of the book. But I doubt that you will find much gluten content information about einkorn wheat in the book, because the book was written more about the evolution of modern wheat, and the significance of GMO techniques. You can easily Google "gluten content of einkorn wheat", however and find plenty of articles that discuss the gluten content of various wheat species. For example, the article at the link below compares modern wheat with ancient varieties by means of an extensive research project that determined the gluten content of many samples of wheat, and it contains charts showing gluten content, gliadin protein fraction, and just about anything else that you might care to compare. Briefly looking at the charts, it appears that einkorn wheat has roughly about three quarters of the gluten content of modern wheat.

But it is true that some of those ancient wheat varities are easier for humans to digest, because their DNA is configured differently. Unfortunately, that doesn't make them any safer for someone who is sensitive to gluten. It will simply take longer to destroy the villi in their small intestine. Here's that link:

Tex, would you send me the excerpt about einkorn?

A nutritionist that I have worked with before (for a non-MC related issue) is trying to convince me that she can cure me of MC, and says that einkorn wheat is safe. I tried looking it up, but all I find is einkorn sites saying how the gluten in einkorn is different from that of regular wheat, and this is safe for people who are intolerant of gluten.

Do you know of anyone who has been cured of MC and is now able to eat all foods, provided that they are all organic and free of glyphosate? I am very skeptical.

Hi Martha,

Nutritionists are not trained to understand the subtleties of treating MC, so consequently, their advise is often counterproductive. It's possible to develop a tolerance for food sensitivities, even gluten, many celiacs are asymptomatic, for example, but the immune system continues to produce antibodies in those cases, so the damage to internal organs continues, despite the lack of clinical symptoms. But as far as being cured of MC goes, that doesn't happen. Some gastroenterologists believe that it's cured when the cellular histology of the intestinal mucosal returns to normal, but all you have to do is take a few bites of gluten, to prove that position incorrect.
