Mango Ice Cream

I made mango "ice cream" today. It was quite tasty if I have to say so myself and it couldn't have been any easier to make.

3 c. frozen mango chunks
1 can organic full fat coconut milk

Process mango chunks in food processor until smooth. Stir in coconut milk. Process again. That's it! It's the consistency of soft serve ice cream. I think the next time I'll add some Enjoy Life mini chocolate chips. If you don't have a food processor a blender will work.

Wow addition of coconut milk give a much creamier flavor to the Mango Ice-cream. A Mango Milkshake made with this ice-cream will taste amazing.

I also make an easy ice cream with 1 can of full fat coconut milk, 1/8tsp. salt, 1 tsp vanilla and a little honey. Mix, and since I have a little ice cream freezer I use that. Eat have as soft serve and harden the rest for another day.

Savni, yes it definitely would make a good milkshake! Thanks for your recipe, Nancy. That sounds good & quick to make. I've been hungry for ice cream but haven't made any lately. Hi, Brandy!
