Hi everyone, great site, it's a blessing to find this wealth of information.
Thank you Tex and everyone who has contributed to make this a refuge for us MC sufferers.

I was diagnosed about a 1 1/2 ago with MC, GI put me on the budesonide for that initial period, I was Killed with leg pains when I started tapering off, GI said it couldn't be the budesonide. I ended up having to open the capsules, and go down in 1/8s and even then the muscle pain in my legs was severe. Anyway cleared everything up for a short time then it returned.

I just found this site recently and am scrambling to get a fully GF diet together.

I have a question regarding Stage 1 and bread.

I have already been making this bread for years using a GF bread mix available on Amazon (search Pamela's Products) and with a bread maker you need 1 tbsp yeast, 1 egg, and 1/3 of oil. I usually use sunflower or safflower oil. The bread is really good and the kids even like it.

My questions is do you think this is suitable for Stage 1 diet, is there anything screaming Don't Do It' or should I cut it out altogether and introduce it slowly later.?

Here are the ingredients

Sorghum Flour, Tapioca Flour, White Rice Flour, Sweet Rice Flour, Brown Rice Flour, Evaporated Cane Sugar, Inulin, Millet Flour, Molasses & Honey, Rice Bran, Sea Salt, Xanthan Gum.
Allergen Information: Free of Top 8 Allergens
Manufactured in a gluten-free certified facility, on equipment that processes Tree Nuts, Coconut, Eggs, Soy and Milk. Manufactured in a peanut-free facility. (I see the soy here but do you think it could be a factor).

Welcome to the group. I would avoid that product until I was in stable remission, and then try the bread to see if I could tolerate it. Here's a list of the ingredients that would bother many of us: tapioca flour, brown rice flour, millet flour, rice bran, xanthan gum. Individually, we might be able to tolerate those ingredients, but all together they would cook our goose. Anytime a product has more than 5 ingredients, it's very unlikely that it will be tolerable for most of us. The reason why millet flour is on the list is because it's notorious for being cross-contaminated with gluten. Otherwise it would be a safe flour for most of us. If you're still recovering, specially, using any product from a facility that processes soy is playing Russian Roulette with your chances for reaching remission.

At least that's my opinion. Again, welcome aboard, and best of luck with your recovery.

If you have WD avoid it for now. Stick to foods without ingredient lists. Good substitutions are rice, potato, and sweet potato.

Most of us can tolerate GF bread when we are better healed.
