Pumpkin Bread (almond flour)

1 1/2 c. pumpkin
3 eggs
1 Tbsp vanilla
1/4 c. honey
1/4 c. coconut oil
2 c. almond flour
1/2 tsp salt
1 tsp baking soda
1 tsp pumpkin spice
1 tsp cinnamon

Preheat oven to 350 degrees. Mix the first 5 ingredients together. Add the flour, salt, cinnamon, pumpkin spice and baking soda. Mix well. Pour into a 9 x 5 pan. Bake for 50 minutes.

Karen,

I didn't test okay for eggs but after I had time to heal and reach remission, I found that I can eat baked items with eggs in them without any problem. I hope that you don't have a sensitivity to them but if you do, you may find that you are able to have them in baked goods.

Pumpkin Pie

My pumpkin pie is flourless. I got the recipe from my diabetic cookbook, without the crust. I double the ingredients and make two pies. It's delicious when cold and I eat it with eggs, turkey, or any other healthy meat for breakfast. Yum! Plus it has soothing qualities. My gut loves it.

Ladies who have knowledge about this Topic and of course, TEX, Kindly be of whatever assistance you might, please!

I know this Recipe Thread may be a few years old, but the last time I made this Fantastic Pumpkin Bread Recipe was back in 2015. I believe I used it straight from Marcia's post of that same year. It was superb and I loved it!

I was re-tested a few months ago by EnteroLabs and now I find the new test results added Almonds to the foods I react to.

So, my Question is: What Flour, besides the Almond Flour, might be substituted to make this Pumpkin Bread Recipe be safe and taste great again?

**I react now to Tree Nuts and Soy besides Gluten.

Hi, Treese. I'm glad that you liked my recipe, sorry you can no longer use almond flour. I can't be of assistance with changing the type of flour. I hope someone can help you.

I wonder if I would react to the Almond flour being that it is baked in? It's not like I am eating almonds. It must get distributed throughout the Pumpkin bread. I might just give it a try anyway. It was the Only dessert type thing I ever liked on this CC diet of mine! I mean that, too! Thanks for sharing it!

Thanks, TEX. The Links provided suggestions. Sunflower Seed Flour seems a possibility with some adjustments. But as it is from the Soy family, it may be no better than the Almonds in the Almond flour. I scored a 12 for reactivity to Soy on the Entero Labs tests, besides Tree Nuts and Gluten reactivity.

Not sure which road to take as yet.

Do people automatically react to Almond Flour if they react to almonds? Is it possible they might not?
