Hello,
I'm in month 5 of my healing, recovery diet. I tried a zucchini (peeled, sliced and steamed...actually over-cooked as it was like mush!)
Seemed fine at first but the next morning felt terrible with diarrhea and the following night had severe belly pains!
Anyone else have this response? I thought it would be safe to eat as it is from the "squash family" and I seem to tolerate them fine.
Any input from anyone is appreciated.
Thank you,
Julie

Re: Zucchini, Safe to eat or not??
Hi Julie,
As far as I'm aware, zucchini shouldn't cause any problems. At least I don't recall anyone posting about a negative reaction to them. And if you've been eating squash, then your small intestine should be capable of producing the enzymes needed to digest them, so that's a puzzling reaction. Is it possible that you might've caught some sort of one-day stomach bug that happened to be going around? It's not impossible that you might have reacted to them, but that would have been unusual, based on the experiences of most of us.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
Re: Zucchini, Safe to eat or not??
Hi Julie,
I also have an intolerance to zucchini and all summer squash. Very disappointing as I used to love them. I’ve been afraid to even try winter squash. Tex, I never thought to mention it on this forum as it appeared to be safe for most, even in stage one of the elimination diet.
Interestingly my daughter and daughter-in-law have the same reaction with summer squash and they don’t even have MC. I guess this reminds us that we all have similar symptoms, but different intolerances.

Hi, Julie. I don't have any issues with zucchini. I roast it or was purchasing the steamable spirals at Costco, but they no longer carry them.
