I,ve just received my Enterolab results and it states that i have a significant reaction to white potato. Does that mean all potatoes like yukon gold or red potatoes? Could I perhapes try a sweet potato instead? My gluten 1gA was extremely high at 590 so I'm concentrating on getting as gluten free as possible and retest down the road.
I was formally identified as having LC a year ago but I know that I have had symptoms for at least three years. I am not suffering with DIarrhea at the present time but do suffer with fatigue and intestinal discomfort that might last for a few hours or a couple of days. Hopefully getting rid of the gluten will stop these symptoms.

Your issue with potatoes will depend on your overall test result for those 11 antigenic foods. If it was below 10, for example, potatoes may not be a problem at all. If your score was much higher though, even the colored potatoes may cause problems. The risk with potatoes is related mostly to joint pain, and arthritis symptoms. But regardless of whether any other potatoes cause problems, sweet potatoes should be safe, because they're safe for most of us, even if we have a potato sensitivity. Other than that, colored potatoes are somewhat easier to digest than Russets, because the type of starch they contain is easier to digest. The reason this can be important is because when the intestines are inflamed, the small intestine is unable to produce normal amounts of the enzymes required to digest many foods, especially carbs.
Regarding your relatively high test score for gluten, the longer we react to a food they higher our antibody level becomes, so your score is high because you've been reacting to it for several years. At that level, it will take at least several years for it to go back down to a normal level, because anti-gladden antibodies have a 120 day half-life, so they decay very slowly. Antibodies to most other foods, for example, have a five or six day half-life.
