Enterolab Questions

Hello,

I recently received my Enterolab results and would greatly appreciate any feedback/advice you may be able to provide.

Results:
Fecal Anti-gliadin IgA 118 Units (Normal Range is less than 10 Units)

Fecal Anti-casein (cow’s milk) IgA 188 Units (Normal Range is less than 10 Units)

Fecal Anti-ovalbumin (chicken egg) IgA 175 Units (Normal Range is less than 10 Units)

Fecal Anti-soy IgA 165 Units (Normal Range is less than 10 Units)

Mean Value 11 Antigenic Foods 107 Units (Normal Range is less than 10 Units)

2+Foods:
Rice
Oat
Chicken
Pork
Tuna
Walnut
Cashew

3+Foods:
Corn
Beef
Almond
White potato

No foods were listed as having “none or some” significant immunological reactivity.

Questions:

I have been in remission from symptoms for four weeks. To get to this point, I ate golden potatoes, white rice, turkey, beef broth, homemade jello from beef gelatin. With rice and potato being 2+ and 3+, how was I able to achieve remission while consuming large quantities of these reactive foods?

If/when I have another flare, my go-to foods have been beef broth, jello, rice and potato. What should I eat given these discouraging test results?

Should I be concerned about continuing to consume beef broth or gelatin?

Is Bragg’s Coconut Aminos generally safe to eat at this stage?

How do I know when I’m ready for Stage 2 food items listed on your site?

I very seldomly eat red meat. Aside from shellfish, is other fish typically safe to eat?

Your test results on all of these tests are quite high, suggesting that you've been reacting to these foods for a relatively long time. Maybe you're in remission because you're just lucky. That said, colored potatoes are easier to digest than white potatoes, and rice is the least likely grain to cause a reaction, consequently, these are minor insults.

Sure you should. Why take chances? Making broth from a safe meat, such as turkey or lamb, would be much safer.

Maybe, but when our intestines are inflamed, all commercially manufactured products are possible risks.

I'm not sure how to answer that, because despite the fact that you're in remission, your intestinal inflammation appears to be quite high.

Because you tested sensitive to tuna, you're probably sensitive to a lot of other fish, although that's not necessarily chiseled in stone.
