Help! trying to understand diet restrictions
Hi all~
Need some help and clarification on safe foods. I am looking through recipes in Dee's Kitchen and trying to find a bread recipe I can tolerate with all the enterolab restrictions. I thought nuts were a no-no for all MC'ers, but I see all the recipes use nut flours? Are these okay for everyone, I have just been avoiding nuts/seeds as suggested. Also, many recipes have eggs, can most of us tolerate eggs in recipes even if we test sensitive on enterolab results? Are almond milk and coconut milk generally well tolerated, in recipes anyway? What about flours with legumes in them, as I read legumes are another no-no for MC'ers? I found a GF flour, (Bob's Red Mill brand) that has Garbanzo bean and Fava bean flour in it, would this be safe in baking? What about Potatoe starch if we are sensitive to potatoes in our tests?

We're not all sensitive to nuts, and often, all the fiber is the main reason why we can't tolerate them. So you may or may not be able to use not flours. Regarding eggs, Dee has posted several egg substitutes that can be used. Some of us, especially if we are well on our way toward healing, can tolerate a chicken egg or two in baked goods, and if not, some of us can tolerate duck eggs as substitutes for chicken eggs. Almond milk, and coconut milk are usually well tolerated in recipes. If you're sensitive to soy, don't use legume flours. Likewise, if you're sensitive to potatoes, be cautious about using potato starch. Are you sure you're sensitive to potatoes? Most of us are not – white potatoes are normally an issue associated with arthritis. If you don't have arthritis symptoms, white potatoes may not be an issue for you.

##- I didn't know that about nuts, thanks for the explanation. That said, I am a 2+ for almonds and walnuts and 3+ for cashews, so guess that means no nut flowers for me? what about pistachios or other nuts, do i need to avoid them all with these results?

Pistachio flour may work, but these are uncharted waters. Amaranth flour should be safe, if you can locate any, and pumpkin flour, and sweet potato, or yam flour, are other possibilities. There's also arrowroot.
Red and yellow potatoes contain some of the same starch found in russet potatoes, they just contain a lower percentage, so it's possible that they still might be a problem. You have to judge by your reaction, on that one. We have to listen to our bodies.

You might want to google nut free, gluten free bread recipes. I have found a few coconut flour recipes but they all have eggs :(. Hope you can find something or others in the group can send you some ideas.

I just bought some coconut flour to try as well as some tapicoa and millet flours, hopefully I can turn it into some sort of bread!
Have you used either of these? Of course, just after buying them I read somewhere on here that most mcer's react to Tapioca and Millet flours until in stable remission??? so confusing!

I'm staying away from all grains while healing not just even GF grains...so that's something to consider.

I do get the green banana flour from Amazon. I’ve used it mixed with other flours for other things also...muffins, waffles ,etc.

I am trying a coconut flour recipe but it has eggs (which I think you can't eat?)....I haven't eaten it three days in a row yet so I'm not sure about my own tolerance. Because I am early in my healing I'm a little wary but hopeful . Nightshades triger very painful inflammation flare in my joints I cannot eat any nightshades...not just white potatoes buy all potatoes, eggplant, all peppers (including cayenne which is in many packaged foods) black table pepper is a different genus so it's safe for me. Tomatoes are also out for me...sweet potatoes are not a nights shade so I can eat those. The nightshades family causes inflammation in many people that suffer from arthritis reduce pain levels greatly if they are eliminated from the diet...some people have not problem with nightshades.
Nightshades : Tomatoes, potatoes, eggplant, peppers (sweet and hot) and tomatillos.
Hope your finding some bread you can eat :).
