Hi, John. That's great advice for anyone new to this disease. A very limited diet until the gut heals is what works for many. GF products are full of added ingredients which can cause issues. I'm glad to hear that you're doing so well & it is an encouragement to others. When I found this group 8 years ago & they told me that I would get my life back that was hard to believe, but my life is pretty much back to normal except for the way that I eat and that will never change.

John gives great advice - gluten free treats may contain other ingredients that are trigger for you. the flours etc, and can still have traces of gluten.
Tex wrote an article on this in the foundation newsletter recently
Fruit is also not the most ideal snack as the combo of sugar and fibre is a trigger for MC.
the salad may also be high in fibre and increasing inflammation
what to eat
- safe proteins, every snack and meal
- well cooked veggies (no more than 3 per meal)
there is a guidelines to recovery section that explains these eating suggestions and why we encourage them.
(and why to avoid any processed gluten free foods in the early stages of healing)

the answer to the gluten free bread question is 'depends'
1. depends on the other ingredients (you may be reacting to one or some of the other flours in that bread, or the yeast or if it has dairy etc.)
2. reliability of the manufacturer, as John mentioned gluten free labelling still has small amounts of gluten (up to 20ppm) if you are having a lot of the bread and there is small amounts of gluten you are potentially consuming enough gluten to keep you triggered and inflamed
3. the rest of your eating plan - if you are having lots of sugar and fibre then the bread may be the trifecta of items causing high levels of inflammation
if you read the guidelines to recovery section I provided the link for, in early stages of healing we encourage protein and well cooked veggies and minimal processed food items (bread, cake, cookies etc)
Protein and low inflammation eating plan and lifestyle, the right supplements are the keys to wellness.
if you want to attain long term wellness, remission with minimal medication assistance, making diet changes is your best chance of achieving that.
my question to you - how much do you want minimal symptom life?
I wish we could offer the quick fix, and easy solution with diet and lifestyle.
MC is so different for each person. Some people can make small adjustments and get wellness and remission. for others it does mean giving up processed food items like gluten free bread for months to get the inflammation under control.

Sorry Gabes, forgot to mention about supplements
I take a vitamin d3 tablet everyday, is there anything else I should be taking? I see lots of people take magnesium on here.

in the early stages of healing, Vit D3 and magnesium are our recommendations
there are a lot of posts that explain why.
long story short - for the body to use Vit D3 properly you need magnesium
