Hello,
I was diagnosed with LC in Sept 2018. I completely changed my diet (no meds) and ate bone broth soup with grilled chicken and rice. I regularly take B-12, Magnesium and D3. Over the past few years, I have reintroduce a lot of foods including: eggs, coffee, fruits, beef, etc. I occasionally will eat foods that contain gluten (pizza, sourdough bread, etc.). I do get some diarrhea but its manageable. My question is: Can I do damage to my intestine by occasionally eating gluten?

Definitely. Eating gluten generates inflammation that activates MC. If the exposure is limited, the symptoms may only last for a day or so, but the damage to the intestines can take years to heal, unless you're young (published medical research shows that gluten damage to the intestines of adolescents can heal In less than a year, but 2 to 5 years are required by most adults).

Please note that I based my comments on published medical research regarding celiac patients, and the times required for their intestines to heal after adopting a gluten-free diet. Not surprisingly, there is no such research based on MC patients or patients with any other IBD (other than celiac disease). Note that celiac disease is an IBD, however, although most folks (including doctors) don't think of it that way.

Hello. I think of gluten as poison and I have never been tempted to eat it!!
