Coconut Pudding

Hi all,

So in testing flours using Gloria's wonderful Arrowroot-Based Pudding recipe, I stumbled across a really delicious modification: Chocolate Coconut Pudding. It's easy, high-calorie, and nutritious, assuming you can tolerate canned coconut milk. If you're sensitive to histamines and can't tolerate the chocolate, leave out the cocoa and chocolate chips, and make it with vanilla, almond, or maple extract instead. Here you go:

Chocolate Coconut Pudding

2 Tbsp arrowroot (or potato starch or corn starch - because the coconut milk is so thick, you don't need as much)
1 can coconut milk (the stuff in the cartons doesn't have nearly the flavor nor the calories, and has a lot more ingredients)
1/4 cup sugar (I used brown, but white or maple is fine too)
pinch salt
1 Tbsp cocoa
3 Tbsp Enjoy Life chocolate chips (these are GF/DF/EF/SF and have only minimal sugar)

Add enough water to the coconut milk to make 2 cups. Dissolve arrowroot (or starch) in about 1/4 cup of milk mixture and set aside.

Combine remaining milk mixture, sugar, cocoa and salt in saucepan. Bring to boil over medium heat, stirring constantly.

Remove from heat; add chocolate chips and stir until melted. Add arrowroot mixture and stir until all lumps are dissolved.

(If using extract instead of chocolate, stir in now.) Pour into 4 4-oz dishes and refrigerate until cold (or enjoy it warm if you can't wait, like I couldn't!).

Somehow with a treat like this, I don't feel very deprived! :)
