Hummus

Okay, I've always been a little chicken to try hummus. But last night my boss and I ate at a greek restaurant on the way to this seminar, and I had a plate with several different greek things on it including two varieties of hummus. Of course it was served with pita bread (yes gf is out the window for two days).

But what do you all put your hummus on? GF of course. I might start making that a lunch staple.

Chick peas, tahini, garlic, lemon juice, little salt. Blend it up, top with drizzle of olive oil, sprinkle of cayenne pepper, lemon zest and chopped parsley. Mmm mmm good.

Hi Katy,

I have to say that I just might take the prize for the hummus eater of the year. I have it at least once a day and as a vegan it is a very good source of protein. Great with scallions in it and also chopped peppers or sundried tomatoes. The last 2 avoid because of intolerance to nightshades. Super on rice crackers, GF flatbread crackers and also as a stuffing in celery. Another one is on corn tortillas and rolled up with some refried beans.

I put it on rice crackers, rice cakes, celery, carrot sticks, cucumbers, just about anything that is firm and doesn't have an overwhelming flavor of it's own. I like the Roasted Red Pepper hummus from Trader Joe's.

Katy,

I really love it but have stopped eating legumes like chickpeas for now because of their high lectin (D-causing in me) content. It makes a good topping on a baked potato. Also, a nice sandwich spread to add when you pile your deli stuff up on a rice cake.
