Hello,
I have been reading posts here and I have notes with a few questions, but I am traveling for work and just received my enterolab test results so I wanted to get started with a few questions..
Fecal Anti-gliadin IgA 26 Units (Normal Range is less than 10 Units)
Fecal Anti-casein (cow’s milk) IgA 23 Units (Normal Range is less than 10 Units)
Fecal Anti-ovalbumin (chicken egg) IgA 12 Units (Normal Range is less than 10 Units)
Fecal Anti-soy IgA 9 Units (Normal Range is less than 10 Units)
Mean Value 11 Antigenic Foods 14 Units (Normal Range is less than 10 Units)
While all of the foods tested can be immune-stimulating, the hierarchy of reactions detected were as follows:
Food to which there was no significant immunological reactivity:
Rice
White potato
Food to which there was some immunological reactivity (1+):
Corn
Pork
Tuna
Almond
Food to which there was moderate immunological reactivity (2+):
Oat
Beef
Chicken
Cashew
Food to which there was significant and/or the most immunological reactivity (3+):
Walnut
Within each class of foods to which you displayed multiple reactions, the hierarchy of those reactions detected were as follows:
Grains:
Grain toward which you displayed the most immunologic reactivity: Oat
Grain toward which you displayed intermediate immunologic reactivity: Corn
Meats:
Meat toward which you displayed the most immunologic reactivity: Beef
Meat toward which you were next most immunologically reactive: Chicken
Meat toward which you displayed intermediate immunologic reactivity: Pork
Meat toward which you displayed the least immunologic reactivity: Tuna
Nuts:
Nut toward which you displayed the most immunologic reactivity: Walnut
Nut toward which you displayed intermediate immunologic reactivity: Cashew
Nut toward which you displayed the least immunologic reactivity: Almond
Based on my antigenic food value being 14, do I need to avoid all of the 3+, 2+ and 1+? I have been making beef and chicken bone broth which I see is probably not the best idea.
Is vinegar in ground turkey at the store an issue? I have been reading a lot of labels and those without rosemary extract seem to have vinegar or dry vinegar. Or since I don't have an issue with soy, is ground turkey with rosemary extract less of an issue? (Sorry for any silly questions, I wish I had my notes with me, but really want to start figuring things out now that I have my results in hand.)
Is bacon something I can eat during recovery? Or do I need to wait until remission for this?
I have been sticking to turkey, banana, bacon, butternut squash or sweet potato, white potato, pork, scallops, salmon, chicken and beef.. salt and pepper, coffee, loose leaf tea and water, rotating since I wasn't sure which proteins were an issue until I got my results but now I can refine accordingly.
Thank you, in advance, for your help!

Re: enterolab results
if I were in your position, I would switch to lamb or turkey. Even pork would be a safer choice. Switching may allow you to heal faster.Based on my antigenic food value being 14, do I need to avoid all of the 3+, 2+ and 1+? Without a soy issue, rosemary extract should be safe, and personally, I would prefer that over a "vinegar" option. Is vinegar in ground turkey at the store an issue? It may be safe. Some members here have even used uncured bacon, although it won't store very long. But the fewer chances we take during recovery, the more likely we are to be able to achieve remission, or achieve remission sooner. Is bacon something I can eat during recovery? Or do I need to wait until remission for this?
That should work, after cutting out chicken and beef, and only eating pork in rotation.I have been sticking to turkey, banana, bacon, butternut squash or sweet potato, white potato, pork, scallops, salmon, chicken and beef.. salt and pepper, coffee, loose leaf tea and water, rotating since I wasn't sure which proteins were an issue until I got my results but now I can refine accordingly.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
