Enterolab testing
I see Panel A1 + C1:Comprehensive Gluten/Antigenic Food Sensitivity Stoool Panel by Enterolab Includes:
Fecal IgA antibody against: Gluten (gliadin), Milk (casein), Egg (ovalbumin), Soy, Corn, Oats, Rice, Beef, Chicken, Pork, Tuna, Almond, Walnut, Cashew, White Potato.
Is that enough to start a plan? So far, I feel like I'm guessing what's safe to eat. I'm removing gluten, milk, egg and soy. I've stopped fiber supplements. I'm trying turkey and beef broth, and will add lamb. I'll be looking for turkey and lamb bones to make broth, but only found beef bones so far. I recognize beef could be an issue. I'm also eating sweet potatoes, carrots, rudabaga and squash. I never really ate any of these before but still having the big D everyday. I'm adding Vit D (which was low), I'm going to add Magnesium. I really want to add microgreens, but not sure I should during an active flare. I've had D for 8 weeks now and dealing with dehydration.
What is the concern with sugar and caffeine?

Those 2 EnteroLab panels include all of the foods that normally cause any of us to react. If they don't test a food, it's probably almost never a problem for MC patients.
Excessive sugar causes leaky gut, and once we start to react, then it takes much less sugar to trigger leaky gut. Caffeine is a secretagogue, meaning that it provokes secretions. Unless coffee causes us to run to the bathroom as soon as we drink a cup before we develop MC, most of us are able to drink coffee after we develop MC, but it's safer to avoid coffee during the recovery.
Most of the time the problems caused by coffee are due to whatever people add to the coffee. Most nondairy creamers, for example, contain derivatives of casein, so they cause us to react. The manufacturers of those nondairy creamers display their ignorance by mistakenly eliminating lactose, thinking that's the problem. The problem is casein.

I have no issues with Caffine via good quality coffee. (freshly roasted and ground beans, no bacteria, no mould )
I drink it black so purchase beans that have a sweeter flavour.
agree with tex, half the time the issue with caffeine is what people are adding to the coffee or that the coffee has unwanted levels of bacteria and mould
Regarding tea drinking - again double check inactive ingredients. Alot of tea bags are made with soy based ingredients and many MC'ers react to soy
so what appears as a 'healthy tea' mix can be triggering inflammation

I see the enterolab specimens are now sent to Greece. Can they really get specimens that are still viable if shipped around the world? Is there any timing that matters, or is it refrigerated? Before I spend money, I'd love to know your input.

There's no need to worry. The samples are sent frozen, by overnight delivery. Many years ago, we had a member from Hong Kong (a citizen of the UK) send a sample to the lab when it was located near Dallas, Texas, and the sample got stuck in Customs in Alaska for about a week. When the lab finally received it, it was thawed, of course (and probably smelled like a stool sample), but they were still able to run the test normally, and get accurate results. The test kit will include instructions on when and how to ship the sample.
As far as that goes, is it possible for a stool sample to spoil? They never do smell very fresh to me. LOL. How would you tell when it was spoiled?

I have been discussing this matter with Dr. Fine for some time.
Yes, samples can be sent to Greece. This is fantastic news for those of us living in Europe. Until now, it was impossible to conduct the tests.
However, it will still take some time for the laboratory to become operational.
Just yesterday, I received an email from Dr. Fine that said:
Hola Marta,
We are inching closer.
Right now we can still only serve the US until we get our European license. I am not sure how long for this maybe 2-3 months or less.
Keep checking back. We are almost there!
Setting up the lab next week in Greece.

I sent my lab specimen to enterolab, following their very precise instructions. It was sent to Greece. I sent it on Oct 4th and received lab results on Oct 22nd.
Thought others might like to know they're able to process tests and the timing is just a bit long, but not bad.
