Today, I went into the Sedona Sweet Arts Bakery in Sedona, AZ. I had the best gluten free carrot cake. They use their gluten free flour and then the regular carrot cake recipe. I could not tell the difference.
They have numerous mixes and the flour on their website - sedonasweetarts.com. I am ordering when I get home.
They are about to begin manufacturing on a large scale. I think the holiday cooking will be great again.
Hope all is well with everyone. I have now been able to add back tomatoes and raw apples. It was such a good feeling. Hang in there everyone. You will get there.

Since I cannot find a place to start a new post, I will use one of my old ones to update.
On March 1st, I had to go to the hospital and was diagnosed with pancreatitis. Scared me because my Grandmother and Uncle both died from pancreatic cancer. I was there for three days and nights and was miserable. After I got out, I had a MRI and no masses but did have 6 cysts. I made an appointment with a pancreas specialist in Dallas. I had to wait three and 1/2 months to see him but it was worth it.
He did not know why I had the attack - I am not an alcoholic, my gall bladder was fine and I do not have high triglycerides. He did a colonoscopy and upper endoscopy on me. I had one benign polyp - my first and the upper was fine also. The cysts were gone. He still has no idea why I had the attack.
I have had LC for 20 years. I did not get the diarrhea under control until after I bought Tex book. That was in 2013 and that was on and off. I had started one packet of chlorestymine a couple of years ago and it helped.
Now for the best part of the story - I have had not diarrhea since I left the hospital except for being glutened twice. It is like a miracle. I am normal as can be after all of these years. The doctor indicated he only found small traces of LC.
I have no idea except my husband and I prayed for it to go away. I believe He answered our prayers.

Thanks for the update. It sounds as though your intestines may be almost completely healed. Hopefully, your remission will last.
