I have been eating Cassava Strips which are a safe food for me. Here I come to find out that cassava in any form (flour, chips, etc.) are known to be high in lead. Does anyone in this group have additional information on this topic? Because I am sensitive to every food that is tested by Entero Labs, this news is crushing me. I am getting more and more depressed as time goes on with this limited diet. Any thoughts or additional information would be most welcome. Thanks!

Like many things, that's probably overblown, because the problem is not just isolated to cassavas, it's true of all root vegetables. Like a lot of those stories, you would probably have to eat a wheelbarrow full of them every day in order to build up a lead problem. you're not likely to be eating enough to cause a problem anyway, because the main part of your diet should be focused on protein. It takes protein to heal the damage done to the intestines by gluten, not carbohydrates, because carbohydrates don't help with healing.
