I am newly diagnosed MC (Collagenous). I am hoping that there are some vegetarians here to help me out. I need protein sources. I am eating Tofu, pea protein powder and some brown rice protein. I eat one egg a day. I know that these could be sources of inflammation but I have tolerated these well so far (the brown rice protein may be too fibrous). I am on budesonide and gluten and dairy free. I worry that even though they cause no symptoms they could be slowing my healing. I have tried a few foods that caused me to be symptomatic (potatoes, a quarter of an avocado ). Since I tolerate the tofu and pea protein (along with rice and overcooked carrots) I feel like it is the only source of protein for me. Any suggestions? Thanks in advance

Controlling this disease by making diet changes is usually extremely difficult for vegans or vegetarians, because about 2/3 to 3/4 of us are sensitive to soy, and that means were also sensitive to most legumes, including pea protein. It's not a sure thing that you're sensitive to soy, but the problem is that we usually become sensitive to the proteins that we eat the most of before we develop the disease. If you can afford them, EnteroLab offers a panel of stool tests that they refer to as the A2 + C2 panels, that are especially designed for vegans and vegetarians. The test results would tell you which foods cause you to react, and which foods are safe. We've found their tests to be extremely accurate for the food sensitivities associated with this disease, and most of us who bordered their tests have considered that to be the best money we ever spent on our health care.
If you're willing to eat shellfish, those are generally safe for all of us, including shrimp, prawns, mussels, crabs, lobsters, squid, oysters, etc.

Thank you, Tex. I am allergic to shellfish, I also am sensitive to bottom dwelling sea creatures who contain higher levels of heavy metals like mercury. I can not afford the tests at this time, maybe someday. Thank you again for your input.

I forgot to mention in my first response that yes, brown rice contains a lot of fiber, and although fiber doesn't cause our immune system to produce antibodies, it can irritate the intestines enough that it can cause diarrhea or some form of loose bowel movements.
