Beef Jerky

While I'm on vacation this week, I'm going to try to make beef jerky. I got a Emeril recipe online. Wish me luck. If it goes poorly, I'll have 5 lbs. of it to throw out. I don't know what possessed me to make the whole darn recipe when I don't know how it will turn out.

Okay, it was a disaster. 2 hours past the time it was suppose to be done and it wasn't. I got nauseous from the seasoning smell all day and ended up throwing the whole thing out. If I never smell "Emeril's Essence" again I will be a happy camper.
