Wedding Cakes

Hi all,

I know I can count on you guys for some thoughts/suggestions about wedding cakes and being gluten free! Geoff and I have essentially booked out local VFW for the reception and they will cater it. We have chosen a buffet, which I can eat around. Mostly meats, cheese, salads and such (rolls for the rest of the world on which to put said meat!).

They do not however, do wedding cakes. There are several people in town that do, and one of them I've known my whole life, so I will probably ask him to do the wedding cake. Anyone have a really good flourless cake recipie (that would work for a layer cake)? Or other suggestions? I know Vaughn would let me work with him on this one, but i want something Geoff won't say tastes weird (you know how them non-gf people can be). He always says the kids don't like my lasagne because of the rice noodles. They tell me its because of the "cottage cheese" (which is really ricotta, but they can't remember that!).

Hi Katy!

The best cake I have had is the Gluten-Free Pantry decadent chocolate cake - all of my Non-GF critics agree it tastes "just" like the real thing!

Do you have Whole Foods in your neck of the woods? Perhaps their bakery department could suggest something? I do know they make a really elegant flourless torte that you might be able to make work - not sure you could stack/layer it though - it's pretty dense and heavy!

When is the wedding again? Bittersweet GF Bakery in MN plans to start shipping sometime this year - I know they make cakes, too!

I've got time to taste/try different things. We have set June 2, 2007 as the date. I wonder how many mixes I'd need to feed 100 people (target number at this point). I suppose too it doesn't have to be a traditional style either.

Hi Katy,

I just had a question: wouldn't it be easier to have a gluten-free cake made for you, and a regular one made for everyone else? Otherwise, it would be a really expensive proposition . . Maybe I'm misunderstanding, though?

As Marsha suggested--perhaps a health store does things like this---and I bet they do---might be a bit more :dollarsign: --

I don't have time to look it up right now, but if I recall correctly, some places like The Gluten Free Pantry, sell bulk mixes online. I think I recalling seeing several vendors that offer bulk packaging. The trick, of course, will be to try them all out ahead of time, so that you don't wind up buying a 50 pound bag of something that tastes like kitty litter.

I've tried cookies made with The Gluten Free Pantry's Old Fashioned Cake and Cookie Mix, and I thought the cookies were excellent. I recall thinking at the time that they tasted just like cake. I think that this one would be a prime possibility. With a sack of the right mix on hand, and instructions about being careful to not let your cake accidentally get cross-contaminated, any good baker should be able to turn out a wedding cake to please the most discriminating palate.

The groom's cake wouldn't have to be GF, I suppose, but I believe that there are some good GF mixes out there for devil's food cake, also.
