Hi Wayne - and all other food experts :smile:

Seems I should know this by now but since I have been avoiding everything questionable I still have a question about some things;

Question: Are the Progresso brand canned red kidney beans OK in regard to my food intolerances? The ingredients in question are: Calcium Chloride and Disodium EDTA.
What are these items, what are they made of/derived from?
Have you eaten the above mentioned label beans w/o problems?

Our refrigerator/freezer stopped working some time Thursday or Friday. We didn't notice this until late Friday. They cannot come and fix it until tomorrow, Monday so we have to eat everything!!!!!!!!
My husband is making Chili; we ran out of my safe kidney beans from the HF store and I shopped the super market for canned kidney beans; thus the problem/question.

Hi Karen,

Calcium chloride is a salt, that is used in canning, bottling, and the processing of dairy products. It shouldn't cause any intolerance or allergy reactions for you.

I had to look up Disodium EDTA, since I had never heard of it. It's also a salt, sometimes used as a preservative in food, but it is apparently also used as a med to reduce calcuim levels in the blood. You might want to read about it yourself. Here are a couple of references for it:

I don't normally eat beans, so I haven't eaten any of that particular brand.

Sorry to hear about the fridge. You can make chili without beans, you know. I never put beans in chili. I feel that beans ruin good chile, but that's just my opinion. A lot of people wouldn't have it without beans. Beans can be used as a side dish also, and anyone who wants beans in their chili can easily add them and mix them in. This way everyone can be happy.

Sorry to hear that your refrigerator is on the fritz. That happened to mine last fall. Luckily I found it in time. Turns out that a plug for the defrost came unfastened. Can you believe I had a service plan with ten days left on it? I never buy service plans and don’t know why I did but had a golden moment with that one. Hope you did not lose a lot of food.

Even though my digestive system has made a remarkable recovery the lectins in any type of beans is far more than I am currently able to compensate for. As Wayne has pointed out real westerners don’t include beans in chili. HaHaha. So much for regionalism and all the better for someone that can’t tolerate legumes. Canned anything is best donated as a gift to my friends and relatives that have no intolerances.

Perhaps we could all come up with a recipe for “Oh My God the ice box is broken stew” It might lead to a lot of new ideas. :idea: :shock:

Matthew, 10 days left on the service plan - that's lucky!! I hope I will find similar luck with mine but we bought it over 5 years ago so I don't think there is any warrenty or any plan left in the world that will save us. If lucky it will turn out to be a benign problem. I will let you know.

Wayne, Thank you for your help. It did not come too late as I have not yet had any of the chili; I hold off on things that I am a bit unsure about. Beans of any kind are not generally on my menu but I have occasionally had some chili (with beans, LOL!!) in the past. I buy a brand of canned kidney beans from the HF store that doesn't have any preservatives in it.

The first link you gave is probably more appropriate than the second link as I am not certain the second link pertains to the same product. Prescribed as a medicine it is probably in a much larger dose than that found in canned food as a preservative. I do think it is added to the beans in order to prevent the beautiful red color of the bean skins to turn brown. My husband mentioned he too thought Calcium Chloride was a salt - I guess I could venture into eating a little of the Chili given what I now know about the additives. Thank you again!

It is funny how you Westeners eat chili w/o beans - that's more like ground beef with onions and tomato, right? That brings on another question that I have been pondering - would Tabasco sauce be OK with my food intolerances?
I assume we Southeners add beans because we are traditionally poor........

I am going to be home this morning waiting for the Sears Service people to come and diagnose the Fridg and all.

The only reason I included the second link was to make you aware that disodium EDTA is a calcium antagonist, in case it matters. I doubt that would be a significant problem unless you ate those beans regularly, in large amounts.

I don't know the complete history of the dish we call chili, but what we call chili today is actually chili con carne, (chile with meat). If the ranch cook had served chili that contained beans of any type, to working cowboys, back in the "good old days", they probably would have lynched him right on the spot. LOL.

I suspect that virtually everyone east of Texas ruins their chili by adding beans, and sometimes I'm not so sure of some of those guys in East Texas. LOL.

My husband likes beans in his chili, of course, so thats the way I fix it but I think I'd like it better without. Does that make me an honorary Texan??

Update on Fridg;

It was a relay, a component that makes the compressor start when it works. The relay did not work so the service man replaced it; you guessed it, it was a bargain LOL!! No, actually if the compressor had been the faulty part the warrenty would have covered it...... Maybe next time.

Unfortunately, we wasted a lot of the frozen foods; we just could not eat it all as it defrosted. That's the unfortunate part; I just don't like to throw food away.

Thank you all for your info and help with the chili; I haven't had the guts or the appetite to taste it yet LOL!
