Hiya Sis,

I hope to hear from Lynne, but if not, I won't take it personally in view of the fact that you reminded me that YOU rarely get them. LOL!

You enjoy the holiday weekend too. We are going to work outside. And on Memorial Day we have been invited to a cookout. I'm taking a pitcher of mojitos. Have you had one yet? They are my newest favorite summer drink........light rum, club soda, lime juice, sugar, and gobs of mint leaves. They tatse just like spearmint and are yummy. I have tons of mint growing in my yard too!

Love,

Polly

Sure....here's the recipe for one mojito:

3 fresh mint sprigs
2 tsp sugar (more if you like it sweeter)
3 Tbsp fresh lime juice
1 1/2 oz. light rum
club soda or seltzer water

Crush mint with fork (to release oils) against inside of glass. Add sugar and lime juice and stir thoroughly until sugar is dissolved. Add rum and mix. Top off with chilled club soda or seltzer - dilute as you wish. Add a few mint leaves and a lime slice for garnish.

If you want the amounts for a pitcher-full, just google "mojito" and there are lots of recipes for larger amounts.

Let me know how you like 'em!

Love,

Polly
