Fish sauce

Anyone ever cook using fish sauce? If so, what dishes do you like to use it in?
I notice that some of the dishes at a local VietNamese restaurant use fish sauce rather than soy sauce. To me, it's not as strong a flavor, but they add lots of other flavors so it's the combination that counts, I guess.

What do you think about the use of this condiment?

I use fish sauce in Thai cooking. It is all gluten free. If you get the Thai Kitchen red curry paste and follow the directions on the label it makes a fantastic curry dish. It has coconut milk, fish sauce and a little brown sugar. I make a dish called Masman Curry. It has onions, meat of choice. potatoes, and coconut milk, fish sauce and a little sugar. It is fantastic and gluten free.

If you are looking for some great flavors for cooking that are gluten free,
check out a local Indian supper market. They sell small boxes of spices
in many different varieties. Each box contains about 15 different spices combined. I use them on chicken, in rice, on pork loin. If you don't like to spicey you can just use a tiny bit and it still adds ton of flavors.

If anyone is looking for a good bet on a gluten free resturants try indian.
their culture does not use wheat products. A friend of mine who is indian
is going to show me how to cook some of the food. When we get around to it I'll pass on the information.

Haven't seen you around lately, but then, I just sort of skim the top really fast nowadays, most of the time, so I miss posts ALOT. How have you been?

Thanks so much for the cooking idea -- I like to experiment with combinations of flavors like the ones you mentioned, so I will have fun trying to find the proportions that suit our taste buds.
