As to chicken, it is often injected with a solution. Some of those solutions contain gluten, so you're not crazy!
Check the label and give us a list of the ingredients if you're not sure. We can help.
If I was you, I would go gluten free today. Yes, eating it can cause you all sorts of problems, colon cancer, etc.

I want to encourage you to trust your gut! I have or have had immune reactions to chocolate, chicken, gluten (of course) and other foods.
You are not a headcase! Your body is telling you what you need to avoid. The body has much more intelligence than we might imagine!
I can appreciate how difficult it is for your husband to understand your health circumstances, especially when modern medicine hasn't caught up with cutting edge research. Hopefully, you'll be able to get the information you need from this site so that you can be clear, and, then, chances are, he will ease along too. I'm sure he wants the best for your health.
Chocolate is also a prime suspect in heartburn so you will get double benefit from avoiding it. I know it's hard to let go of our little joys, but there's nothing better than dissolving our symtoms and feeling good again.

P. S. Are you sure the neuropathy is from the Prilosec? Neuropathy is also associated with gluten intolerance. And I have symptoms of peripehral neuropathy when I eat other foods like sugar.
