Menu Time Again

Hi All,

It has been a while since we took turns listing what we eat in a day. I really enjoy these posts because they give me new ideas.

Here's what I ate today:

breakfast - BIG bowl of fruit (raspberries, banana slices, blueberries, and strawberries) with a few raisins and chopped walnuts stirred in

lunch - two ham and romaine lettuce wraps with mustard, huge bowl of homemade vegetable soup, half of a cantaloupe, apple juice mixed with club soda

snack - some potato chips - couldn't resist them (sigh) - plain chips cooked in sunflower oil

dinner - large mixed veggie salad (spinach, lettuce, red cabbage, carrots, radishes, onion) with 6 oz. of flaked salmon tossed in, with olive oil/cider vinegar dressing and a few walnuts and ripe olives thrown in; homemade asparagus soup; iced tea

snack - Medjool dates dipped in cashew butter

So what have y'all been eating?

Ok, I see now why I have a weight problem, and you don't.

Breakfast - 2 poached eggs, fried leftover pork sausage slices

Dinner, (Lunch) - pork sausage, mashed potatoes, 1 Kinnikkinnick GF Vanilla DIpped Doughnut, Ummmmmmmm-----------good, (decadent, but very good).

Snack - 1 large frozen banana, 1 Dr Pepper, made with cane sugar, (the original recipe)

Supper, (Dinner) - a small chunk of leftover grilled, thick-siced, pork steak, (nuked), Lay's potato chips

Cool drink - Welch's 100% grape juice, mixed 50-50 with club soda, as recommended by Polly

Snack - Skippy Natural peanut butter, on organic brown rice snaps

Good evening Kitchen Buddies-

Breakfast- On Polly’s suggestion I have been experimenting with Buckwheat. I bought a bag of Bob’s Red Mill Creamy Buckwheat Hot Cereal and cooked up 1 cup with three cups of of water. It is very filling along with a soft boiled egg, left over meat from the night before and fresh fruit so their was a lot left over. The leftovers congeal into a solid mass. Hating to throw anything away I sliced it into half inch pieces and fried it up with a little olive oil. It gets golden brown and crispy on the outside and soft in the middle. Absolutely delicious with fresh fruit, a little maple syrup, honey or Jam on top. It has a lot of fiber different from all the vegetables that I eat. The only reaction that I have had is larger stools. No complaints their. On the strength of my reactions so far I bought some Buckwheat flour and I am going to try making Buckwheat Pancakes. Found a recipe if you are interested.

Four down is “Fluffy Flapjacks”

Lunch- Homemade chicken soup- Chicken, Carrots, Celery, Onions, Zucchini that has been simmered for several hours and then add some broccoli or other fresh vegetable when I reheat it. Along with a fresh fruit salad- Apples, bananas, strawberries, blueberries, melon.....

Dinner- Barbecued chicken, a mixture of winter squash, cauliflower, and sweet potato. All leftovers. I need to go shopping tomorrow so cleaning out the ice box. Sautéed Zucchini with roasted garlic. Small salad. Fresh fruit salad .

Green tea at breakfast. It hot hot hot hot and dry dry dry so plenty of water during the day.

Snacks - Apples dipped in a little almond butter, apples, fresh fruit. Had several service calls to go out on this afternoon so took a Lara Bar along to tide me over.

Been working on a some arced interior doors, an exercise in tangents, so am off to clamp up the last pieces in the bending jig and then to bed.

HI all,

Just saw this, so will respond based on today, for better or for worse!

We ate late, so breakfast sort of ran into lunch.

I'm the only one left here who drinks coffee, so just fixed my usual slightly colored water coffee (filtered the water myself!) I use Folger's Instant crystals --sure hope that's ok.

With this, I had a peanut butter Envirokids bar -- a little sweet for my tastes, and half a banana.

Then, here comes lunch -- about a half of a tomato from Central Market where it advertised they'd come from a country town that's not too far from here. I have no idea whether or not it was organic, but it sure was juicy and red. (I normally try to get organic at Whole Foods, but hey, this was a gift!)

Anyway, I cut the tomato half up into bite size pieces, and broke into small pieces some of the Applegate Farms sliced roast beef -- couple of slices. They have such a nice flavor that I didn't even have to salt and pepper the tomato.

Had some Mission brand gf corn tortilla strips along with the tomato/beef salad, and also, a caffeine-free coke.

Took Mom to the beauty shop, and got a hair cut, too (my weight loss program -- works every time!).
Before the cut, went next door to the little Russian store, and bought a can of regular classic coke -- about the only American thing in that place, but they have some lovely produce. Mom wouldn't drink any of it, so had no choice but to drink the whole thing.

Tonight, opened a can of organic pinto beans that were purchased at Whole Foods.

Threw in a little ketchup, some thinly sliced red onion, some leftover hamburger that I broke up into pieces over the salad (Mom had saved some of her tomato pieces, so I threw those in hers).

After salting and stirring, I nuked the whole mess, and it was delicious. I had seasoned the insides of those burgers with some of WF's habanero (wiggly thing over the n) spices with green chillis slightly, so there was a hint of that flavor to this as well.
Few more gf Mission corn tortilla strips, and one of those delicious root beers from WFs with the cane sugar instead of high fructose corn syrup.

For dessert, I threw together a couple of smoothies out of a package of WF's organic frozen strawberries, two bananas, a couple of spoons full of smooth, organic almond butter, some dried, unsweetened coconut flakes, and some filtered water, and awaaaay we go. It was a little on the tart side, but that's ok with me.

Hi All,

I've been eating boring lately, mostly meat on the grill. Love the ancho/plablano peppers grilled.

I found a new sauce call Pickapeppa. I comes in a jar about the size and shape of Tabasco sauce with a bird picture on the label. It tastes very close to Worcestershire sauce and is very good in cooked dishes.

I'm making rutamoose for dinner. It's mashed rutabaga and potatoes. I'm adding ground beef, onions, garlic and ? I'll let you know how it turns out.

I ate hash browns, bacon, and 2 T lime juice with 1 T maple syrup in hot water.

skipped lunch

dinner - crock potted pork chops, pickled beets, and peas

Rutamoose? Great name! I love root veggies and often cook up a whole bunch of different ones and mash them.

Marsha - is that a drink? (lime juice and maple syrup?)

Matthew - have you tried the buckwheat pancakes yet?

Oma, good luck keeping cereals out of your diet. They are indeed a major source of gluten. Interesting (but not surprising) about the relationship to your arthritis.

Sorry Polly,

Yes, it's like a limeade or lemonade - I make it with either lemon or lime, hot or cold.

I have a new recipe for you all, it you want something cookie-like. They're really sweet, and not bad if everyone else is having dessert and you don't have anything . . .

Forgotten Cookies

2 egg whites
1 t. vanilla
1/4 t. cream of tarter
3/4 c. sugar
4 oz. (1/2 c.) or less, of choc chips

Beat egg whites stiff with cream of tarter. Gradually add sugar very slowly. Add vanilla. Fold in chips. Preheat oven to 350. Drop cookies on greased cookie sheet. Place in oven and turn off stove immediately. Take out next morning or in 8-10 hours. No peeking!


I found a cake recipe that uses mashed potatoes instead of flour. After I try it I'll post the recipe . . . Marsha

I have a recipe like that. I use Just Whites and make them about once a month. I can't use chips, but I do add cocoa sometimes.

By the way, can anybody answer this?

I can't eat eggs by themselves, like fried or scrambled. If I do it once, it get soft poops, and if I do it two days in a row, screaming youknowwhat. But, I can eat the merangue cookies I posted above. Is it just that I don't eat enough of them, or that the yolks are absent, or the frying process, or that I don't eat them day after day?

Anybody else have a similar food anomoly?

I'll just bet it has to do with the amount accumulated of the ovalbumin, assuming that's the only protein in eggs that you are sensitive to.

I know that not long after I started consistently having normal stools, I was at the PFChang's in Alpharetta, Ga., and that particular one didn't have any chicken that wasn't already coated in their egg glaze stuff (our local ones have always had some left uncoated for just such occasions).

Anyway, I ate it with no consequence, but of course, by that time, I had no antibodies to react to that day's antigens, so no reaction PLUS I didn't eat anything with egg in it the next day or two, so never had a reaction.

It wouldn't surprize me if I'd not gotten a bit of egg glaze on other occasions, and just didn't know it.
It's nice that the antibodies to these other foods don't hang around nearly as long as gluten, apparently.

That being said, I would NEVER intend to go about eating ANY of my known allergens, for the simple reason that I know that if I got away with it more and more, eventually, I would be back eating too much of it, if that makes any sense.

There's definitely an accumulation that goes on inside the body with gluten or any other antigen. Our support group leader recently told me that sometimes people will be getting minute amounts of something all along, and not notice it until it reaches some kind of threshold, and suddenly you've got the signs of a reaction. Not sure I've ever had that, however.

I can pretty much tell what's caused mine, and they're always 24 hours before, unless of course, I'm past the point of being able to tell every tiem I've ingested gluten. In a way, that scares me more as I could be getting serious damage to my gut without knowing it.

Anyway, I hope you recover quickly!
Like to hear someone else's thoughts on the matter.

I'm back in AZ again. I've been away from the computer for a while, so sorry I'm taking so long to reply. Is an egg intolerance common for celiacs? I'm guessing that's the support group you're talking about.

Can't speak for celiacs, particularly, but it appears that many MC'rs do react to egg whites as that's one of the tests that Dr. Fine developed first after the gluten and dairy antibody ones, apparently. From this board, it would appear that eggs are a little bit less likely than the others to produce antibodies, however, but then Dr. Fine's group would be much larger than what we observe here.

It appears that the genotype for the HDL DQ genes is almost predictive for which of the foods we form antibodies to if we get this diagnosis, which makes sense, if you think about it.

Eggs would sure be a handy protein alternative for me, but I do fine without it.

You know what is really great on a baked potato is a sauted onion, sauted in olive oil, cook it until it is extremely well cooked. Add a tiny bit of salt and pepper and paprika and garlic, or not. This makes a really great topping instead of some sort of dairy product.

Tonight though we are having baked sock-eye salmon with just dill on it, baked spuds, and green beans. This is such a colon friendly meal. I use Smart Balance on my spud, it is pretty darn good. And then canned green beans, very plain super, but mom is coming up for dinner, she puts me to shame in the touchy tummie department. But I did make some fresh blueberry sauce, made with a little bit of sugar, corn starch, lemon and vanilla. Mom loves blue-berry pie, this will have to suffice.
