Pasta salad alternative
Hi All,
I discovered a great way to have "pasta salad" again. I just substitute chick peas for the pasta and make it like I used to. Not too bad. I use canned chick peas because I'm lazy.

What the heck ARE chickpeas, anyway? Are they a grain, or a legume, or a root vegetable or a fruit?

Do you know them by the name garbanzo beans? They are legumes. You should be able to find them in any grocery store, if not in the canned bean section, certainly in the ethnic section. They are used in Mexican, Indian and Middle Eastern cooking.
In "pasta salads" they are close to the texture and starchiness of pasta.

Chick peas, aka garbanzo beans are Lectins. As much as I love the taste texture and flavor if I eat more than just the smallest taste they set me off for several days. No D just lots of gas , cramping and not tolerating any food very well. I avoid them . Oh Well! Oh Well!
If you have not read it, Dogtor J’s links on Lectins are very interesting. I look forward to his insights when he has time to write more about them . In the mean time. His essay “The Answer” and “Viruses- Friend or Foe” go into the problems of dietary glycoproteins, Lectins, and a lot of other intresting stuff.

Yes, I think we are all a little different.
My last experience with Chick Peas was more similar to Matthew's than to yours, Jean. On the other hand I eat a ton of Smucker's Natural Peanut Butter and I feel fine - peanuts are a legume too. Go figure!
