Hi guys!
I am so excited by the recipes on this site. I especially thought of you, Matthew, because I know you eat yams and sweet potatos, and like to experiment with recipes. (Gee, I thought I remembered that. I hope I'm right.) Secondly, this site lets you search by ingredient. I wish all recipe sites were organized that way. It's a South African recipe collection. Anyway, here is one as an example:
Futari: a tasty combination of squash, yams, and coconut milk.
*one chopped onion
*one lb squash, peeled and bite-size cubed (op. hubbard or sweet pumpkin)
*a lb. or two of yams (sweet potato may be substituted) peeled and bite-size cubed
*oil to saute
*one cup coconut milk
*1/2 t ground cinnamopn
*1/4 t ground cloves
*salt to taste
Fry onion in skillet, stir & cook until tender. Stir in all other ingredients, heat to a boil. Reduce heat, cover & stir occasionally. Cook until veggies are tender (10-15 minutes).
It sounds so good. If it actually is good tonite, I'll post it in the recipe file.

Wow, that sounds good. I am still a bit skeptical on coconut milk in that after using one brand of coconut oil that seemed to do a lot of good for a long time I could not find it anymore then when I switched brands I had major problems. Maybe I have healed enough to try it again. Who knows maybe it was something else at the time
In the mean time I will have to look at all the rest of the recipes on the site. Rather than seeing cooking MI meals as a hassle i find it pretty neat to find new ways of combining things that i can eat in new ways. Their are so many good things to eat besides grains ,soy, and nightshades that I have little time to concentrate on what I have had to eliminate and just enjoy so much alllll the other food
It is so neat to have input from some one else instead of having to do all the looking myself.
