Crockpot Roast Sticky Chicken
(Note....you need to start a day ahead!)
4 tsp. salt (I used 2)
2 tsp. paprika
1 tsp. cayenne
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. black pepper
1 large roasting chicken (to fit in crockpot)
Combine all spices in a bowl. Remove giblets, clean cavity, and pat chicken dry with a paper towel. Rub mixture into chicken - inside and out. Put in resealable plastic bag and refrigerate overnite. The next morning, put chicken in crockpot (do NOT add any liquid) and cook on low for 8-10 hours. (Instead of crockpot, you can also roast in a pan in a 250 degree oven for about 5 hours, with occasional basting).
Comments: This is DELICIOUS and has a little kick to it. Lots of juices from the chicken itself remain in the crockpot after cooking and can be used a the basis (stock/broth) for a wonderful pot of chicken soup. The chicken soup has a little kick to it too. I found that this chicken cooked in about 6 hours - but this probably depends upon the size of the chicken and the individual crockpot. To be sure, I used a meat thermometer when I noticed the chicken had shrunk quite a bit. I'll use a bigger chicken next time.
