4-6 pork chops
salt and pepper
dash of sage
Oil
2 T of potato flour, cornstarch or arrowroot
1 c water
1 T. Vinegar
3 tart apples, cored, sliced (peeling optional, but I do it)
3 T brown sugar or molasses (honey to be strictly paleo)
Season chops with salt and pepper and sage, brown in small amount of oil. It's better to use a non-stick pan I think, because you get more good tasting stuff stuck to the pan. Remove chops from pan and arrange in casserole. Arrange apples over chops. Stir flour into skillet, then stir in water, brown sugar, and vinegar. Pour sauce over chops, bake covered at 350 for 1 hr 30 min.
It says it serves 4- 6, but in my experience, it serves 2 because they're pretty good.
I should give credit to Mrs. Milton Anderson from Fort Douglas, Utah, and Mrs. Edie Coury of Hahn Air Force Base, Germany for contributing the recipe to "Recipes on Parade, 2000 World Wide Favorites of MIlitary Officer's Wives).
