Paging Creative Cooks

Hi friends!

I need some help. I love stuffed green peppers but just cannot figure out how to make them given my intolerances. What kind of mixture do you suggest I stuff them with? Remember, I can't eat rice, bread, any tomato products, cheese, or legumes. I'll give a gold star to anyone who can help.

Well, I'm not creative, but aren't they usually stuffed with hamburger? Maybe adding some zucchini and/or squash or potato to the mix would give it that substance you are looking for?

Hi Polly,

Yep, most recipes call for ground meat and rice, cheese, etc. Katy's suggestion should work. If you want something more exotic, here's one that uses shrimp, (you should be able to leave out the tablespoon of cornstarch without adversely affecting the outcome, or substitute arrowroot, or something similar, if it actually needs a thickener):

Here's one using pork, (again, you should be able to leave out the cornstarch and soy sauce, without causing any problems in the final product):

I've found this mixture nicely replaces rice or breadcrumb stuffings for peppers, pumpkins, cornish hens or whatever you feel like stuffing.

ALL FRESH PRODUCTS
garlic cloves
onion
celery
mushrooms- I like portabella
pecans or walnuts
carrots, if you like them

Grind and mix on low in food processer, not too long- don't want it to get liguidify. This gives a tasty base to mix with a ground meats, sausage, chicken livers or lamb.

You can add a little lard, or your favorite oil while cooking the meat.

Seasonings I like are parsley, sage, rosemany, thyme, basil, salt and pepper. Marjoram and extra garlic are a must if your using lamb.

Peppers are spendy here- green are available for a buck on sale but yellow and orange are normally 2.40 each.

These are all good ideas. Joanna, the "paleo paste" is a a find. Did you make it up yourself? It would be good to have a large container standing by in the fridge to add to lots of things. OK, here are the awards:

Have you stuffed those peppers yet?

I didn't "create" that mixture myself but make variations of it all the time and keep it in the fridge to add to veggies and meats. This is a link to a Paleo Forum I follow which some of you may like- if you go back at least 6 months you will find a recipe thread. Also, lot's of other good stuff.

Actually Shirley, this is the thread I was looking for- it has over 100 recipe posts so lot's of good paleo food suggestions.

Thanks for taking time to look for it. What do ya think of that site, lot's of interesting Paleo discussions arn't there? The forum use to have alot more action but a few months back a group of active posters broke off to form a new discussion and support board for meat eaters only-isn't that extreme or what? I love a good steak but love my veggies too!

Anyone interested in Paleo should check out that forum, imho.

Thanks for the great link. Some very interesting threads and recipes. I am looking forward to looking at the site on a regular basis.

After eating fresh fruit and vegetables from the farmers market all summer with some natural meat and fish , No, not in my wildest dreams can I imagine eating only meat. All the fruits and vegetables are so good that I can say I really enjoy having to have given up gluten containing grains in order to discover them all over again.

I didn't see that one when I was looking.
The site seemed quite interesting and I did notice that some were turning into "meat only" eaters. Seems a bit extreme to me too.

Hi Joanna! Thanks for the link. One of the first recipies was for Ox tail too! We got a couple ox tail cuts when we got our cow (despite not ordering it and not having a clue what to do with it). Maybe now I'll have to try something with it some day, lest it die a freezer burn death in the depths of our freezer.

Cool Katy! Hope you will pull it out and try that Oxtail recipe.

I've got lots of scarey stuff in my freezers too. In 14 years of co-habitating with my hunter/fisherman not once have I been able to use up our salmon before we stock up again. He refuses to toss it- I've got fish from 1998 in there that's good for nothing now but dog food. Thank goodness we have dogs.

I seriously need to learn how to manage our freezers better. Now, it's hunting season....... so here we go again. :oops:
