What did you eat today?
OK, time to share some menus with each other!
Here is what I ate today:
B - banana, some walnuts, 2 dates, and black coffee
L - omelet made with one whole egg, 2 egg whites, and 3.5 oz.flaked sockeye salmon; homemade beet soup (chicken broth, onions, garlic, beets, cabbage, S and P).
D - sweet potato/pumpkin soup (made with coconut milk), roasted veggies on mixed greens (carrots, beets, eggplant, artichoke, red pepper), unsweetened iced tea
S - leftover pork tenderloin and a few potato chips (DARN, just couldn't resist 'em - but I guess we have to have some vices, eh?), pure apple cider

I generally start each day with hot green tea (buy it bulk from an herb shop) with a dash of honey as I'm getting my husband off to work and daughter off to school. After they leave I read the paper and often drink up to 3 cups before I eat anything.
B- leftover pumpkin with caribou, onions which I zapped in microwave
L- since I was home today I stir fried onion, portabella mushrooms in walnut oil. Add oriental greens (not sure what they are but I eat them all the time) and cherry tomatoes. Add small amount of chicken stock and coconut.
D- moose meatloaf with onion, eggs added for moisture. Carrots and shaggy mane mushrooms. I passed on the baked potatoes.

The sweet potato/pumpkin soup sounds great even though I would have to leave out the eggplant. Those pesky nightshades. I will give it a try some time.

I would feel better if you ate some vegetables. Hahahah! I am aware that it might make me feel better but not you. Have you tried them lately in one of your classic test or are you waiting for a convenient time to be sick.

I enjoy green tea in the morning also. Never thought I would give up coffee but found that I actually like the green tea even more. If I don’t finish the pot it is just as good cold later in the day.
Breakfast

LOL. I appreciate your concern. Actually, I do eat some veggies, some days - Polly just happened to catch me on a day when I didn't. I often eat green beans, broccoli, squash, etc, just not every day. I usually eat a bananna or three, also, but I happened to be out of them yesterday.

My thoughts and sentiments exactly! I was such a coffee lover my espresso maker was front and center, like a shrine in my kitchen. Now, it's collecting dust in the cupboard and regret spending so much $$$ on it. I still love the smell of fresh brewed coffee, but have never developed a taste for drinking it without cream.Matthew wrote: Never thought I would give up coffee but found that I actually like the green tea even more.

Yes Joanna, I can’t think of coffee without cream. Walking into Barnes and Noble or the Tattered Cover and smelling the coffee ins enough to give me a caffeine buzz. The soy creams were out of the question since I react to Soy so strongly and the powdered non dairy creamers had so many chemicals of unknown origin that i just gave up. Isn’t it amazing what comes around when you give up. Green tea is so much lighter and refreshing than coffee ever was. Besides, their is a ritual to making tea first thing in the morning that I thoroughly enjoy.I still love the smell of fresh brewed coffee, but have never developed a taste for drinking it without cream.

These “ what do you eat “ threads are always very interesting. Looking at how you start your days and what you eat for breakfast made me realize once again how important it is, for me, to try at the least to eat some kind of balance of protein and Carbohydrate for breakfast. As far as I am concerned breakfast is the start of a good day or the start of a bad day. Only coffee or only protein or only carbs would without a doubt set me off for a bad day.
I might have created the illusion that I eat a big breakfast. That does not work either. A half a cup of soup, the sausage and maybe a half a cup of fruit. I do not ever have to eat a lot at any meal. In fact do best if I never overload my digestive system but find I work and play at my best by a careful consideration of carbs, sugars and proteins at any meal.
Yes, it takes a little planning. Haha. Very little if I stay with the KISS principal.

I ate dairy-free yogurt with granola and no oats, for breakfast. I can't eat oats. I have all the ingredients to make the granola and I am hooked. I had a rice cake with almond butter and Vitamin C pellets mixed with pear juice for lunch. I counted the carbs since I am a Type 1 diabetic. My diabetic doctor told me you don't inherit Type 1 diabetes but you inherit Type II diabetes. I think St. Joseph Hospital caused my stress and then I developed Type 1 diabetes. The American Diabetes Association is no help and I don't like them. I did not inherit Type I diabetes from my daddy. He died from a heart attack - a complication of diabetes at age 50. Nobody helped my daddy build our house - only my mama and brother helped. I wasn't born yet and we lived in an army barrack. We were truly poor and relied on neighbors, Mrs. Howell for food. Life was poor back yonder, especially in the south. Health care is truly awful in Savannah. If you visit our fair weather city, a city with a "pretty face but dirty" as said by the actress Mary Aster, when she visited Savannah, don't get sick. Get sick somewhere else.
