Sorry I haven’t had time to be around much lately. Sometimes it out of the frying pan and into the fire, or is it the other way around?
I wrote some time ago about the ten sets of nesting tables I was building for another woodworking shop. They had done three sets of prototypes , finally agreeing on the third set. I asked several times if the dimensions were correct and had them sign off on the final drawings. Turns out that after I had completed the woodworking and the finishing that I had been given the dimensions for the second set of prototypes.
So I have been struggling to build them all over again and do my best to meet the other commitments I had made while making the first set. Lots of days till ten PM. I don’t sleep well if I am on the computer to late so some days never turn it on. At this point it will be a mad dash to the end of the week. It may not sound like fun but it is not bad at all when I feel good all the time.
I am going to my sisters for thanksgiving. They plan to stuff the turkey so I bought half a natural turkey breast that I will do on the barbecue if it nice, in the oven if it is not.
My neighbor gave me a great idea of layering thinly slice squash and root vegetables in an oiled pie plate alternating layers with apples, red onions and a little garlic. Cover with foil. Put a heavy weight on top, like a cast iron frying pan so that it will compact during cooking. Cook at 350 until done. When cool turn out onto a plate. Reheat when ready to serve.
Sounds perfect and perfectly easy. And of course perfectly Paleo.

Have fun at your sister's. The layered dish sounds yummy - thanks for sharing. You reminded me that I made a scalloped potato dish some time ago by layering thin slices of potatoes with onions and garlic and pouring some chicken broth over it before baking. It tasted a bit like my mom's old scalloped potato recipe, altho I'm sure hers was loaded with milk or cream and butter.

Sorry I didn't respond to this sooner. Matt, I did intend to say that your dish sounds interesting and now so does Polly's.
I've got to put both of them in my "files" and try them one of these days.
Polly, you bet your Mom's scalloped potatoes were full the "old good stuff"!! I even used to put cheese in mine.
