Dinner tonight

Hi kitchen buddies!

Hubby and son went to the Ravens' football game tonight so I cooked just for myself. Poached some turkey cutlets in chicken broth and then cut them up and made a hot turkey salad with tarragon and a little "safe" mayo. Also cooked up a batch of red-leaf kale with chicken broth/onions and steamed some butternut squash and cabbage. YUM, was everything good! And the best part is that I have enough of everything to have the same meal for breakfast tomorrow. Even before paleo, I was a leftovers fan!

What have others been eating these days?

Hi Polly...not nearly as interesting as your meal. I had baked chicken, Caesar salad, and steamed broccoli. I made artichoke dip for my party later and had a little bit with celery sticks. I also had one bite of my apple pie (sweetened with Splenda) and one TBSP of my homemade clam chowder. I really wanted more of everything, but didn't dare mess up my low carb diet. :grin: Nite nite...JJ

It's been a typical holiday season at our house eating wise, lot's of extra fluff foods in the house that I have to ignore. I wish my husband and daughter would too, maybe someday. It would be good for them to make some major diet changes.

I looked around the kitchen last night at the potluck foods that friends brought to our new years eve party and thought to myself, what is this world coming to? Lot's of baked goodies, sweets and breads, processed foods and dips...the list goes on. I'm cleaning up the aftermath today and it almost disgusts me.

Over the years, I've managed to train my family and friends not to be concerned about my dietary preferences but not one person brought anything whole, or fresh! This astounds me. I just nibbled on leftover halibut and salad greens most of the evening and indulged in some alcoholic merriment to celebrate the new year.

Paleo Pals-

Had a couple of good friends over New Years Eve. We exchange books with out the least fear of regifting and with so many different interests I have a great stack off books for the new year plus leaving some spaces on my shelves for new things to come along.

I steamed a pile of shrimp and served it with a mango chutney. Mangos, sweet peppers , hot peppers and onions chopped coarsely. I don’t have a recipe. You all must know by now that I just jump in with both feet.

Brined a couple of natural cornish game hens and despite twenty inches of snow and four to five foot piles at the intersections of my backyard walks lit up the charcoal in my barbecue and grilled them along with fresh asparagus, sweet peppers and thick slices of onions. Along with a fresh salad with oil and vinegar I enjoyed it as much as my guests.

After dinner we walked the fifteen minutes up to Pearl Street and the neighborhood bars, navigating the ice and many unshoveled sidewalks, where I enjoyed a glass of dry red wine and joined in the revelry. Back home to watch the ball drop and then on to the New Year.

P.S. Made an incredible omelet for breakfast with the few leftover shrimp and grilled vegetables along with a bowl of fresh fruit and , of course, a pot of green tea.

Can I ask, how do you make artichoke dip? I assume there is no milk in it, because paleo means no dairy . . .

Hi...I'm not Paleo....just doing low carb at the moment. I used canned artichoke hearts (in water), cream chesse, parmesan chesse, and Monterey Jack...chopped in food processor...baked in the oven...served on baguette slices...I used celery instead of bread. Sorry...it has tons of dairy. :sad: JJ

My first attempt at dinner was a stir fry with a simple sauce of apple juice, olive oil and five-spice. It was pretty good and I didn't miss the rice - much. I had hoped to put some arrowroot in the sauce to thicken it, but I didn't have any.

I'm a little confused about how to handle spices. I doubt if our paleo friends were able to order great stuff online from Penzey's Spices, but I don't want to give that up.

Hi Reggie,

Sounds as though you're off to a good start. If you buy pure spices, I don't think there would be any problem, even from a paleo-purist viewpoint. Most spices are of pretty ancient vintage, and were probably around in paleo times. True, the paleo people probably didn't worry too much about properly seasoning their food to enhance the flavor, but that's just because they were too busy dodging saber-toothed tigers, short-faced bears, and other hostile critters that were higher up in the food chain.

There's no reason to give up good flavor, just because you're following a paleo diet.

I think that it an important concept that we keep in mind that we are following the Neo Paleo diet. In reality we have very little idea what they ate and it certainly must have changed with the seasons , game migration, drought and many other factors. Since we are not actually out hunting we really need to keep in mind that we shop in Grocery stores. Certainly herbs and spices might have been a part of their diet. Or been part of healing rituals. We can only guess about a whole lot of these things.

My concept has always been to follow the intent of the diet and its underlying truths. Even though some of my clients feel that I use 17th century methods I use 220 volt machines every day. You can look back and learn a great deal but you can’t be their, you can do what works now.

Same with the foods that we can get today . Thus herbs and spices used in the small amounts to flavor food seem to me to be just another vegetable and unless one recognizes one or all as a problem then their is no reason to eliminate them. The Paleo diet is not a punishment. You don’t have to eat bland food. In fact the better the foods taste the more likely you are to eat them.

My original premise of shopping the edges of the store, in other words through the produce section , through the meat and fish isle and a brief interlude in the herb and olive oil section might just be as close to the Neo Paleo diet that you need to come . Easy and very tasty to say the least.

Ahh Green Tea! One of My mainstays in this house. I drink it afte all meals when I can. I want to go eat at POlly or Matthews house, wow that all sounded so good, Love Oma
