Yeah, I'm not sure about the nuts now. I normally used to eat a lot of them even on days where I felt good, but who knows now.
I also had more fruit than normal lately. Tis the season. I'll cut back some there. Perhaps bananas instead?
Someone brought me some gingerbread cake yesterday, I think they were from Gluten Free Pantry. Yummm!!! :) Hope you find some good recepies.
Got back from my trip to Orcas Island yesterday and boy an I tired. I'll fill in more details later, but it was very nice there and most of the time I was ok GI wise but not so well other times.
Ok, a few days ago I started feeling better and then starting on Monday I started feeling ill again. Can't find a contributor as they have been things that I was ok with before when I started feeling better.
Two somewhat recent addtions were Safeway brand Applesauce (Natural and GF, I called them to make sure) and Jensen Meat Co Beef Sirloin & Beef Patties. I haven't gotten a response back on the meat, but the package doesn't say exactly what it contains either.
I did have some processed meats on Sunday, perhaps hidden gluten. ???
Also found out today that my Mom, and 2 of my sisters don't do well with dairy products and have cut them out of their diets. Could be the same for me, not sure yet. One of my sisters does ok on goat cheeses and yogurt but not other diary.
Also found out that my mom was A+ and my dad was O+ for blood type. Still not sure what I am.

I'm having my glucose tested next week. He's having me try out a Hydrochloric Acid Test, but I don't think this is a problem. In fact I'm feeling the burning sensation from just taking one, but I'll try again later to make sure.

Other things you might have problems with would be wine, beer, shredded coconut, mashed potato flakes, onion or garlic powder, corn syrup or maple syrups, vit B1 or B7 or Vit C, or shrimp. Just a partial list, and very important, there is a delay time before symptoms 8-30 hours for various symptoms: headache, muscle aches, red eyes, stuffiness, and the big D.

1 year later. LOL Well sulfites I think are an issue for me. As wine and other high sulfite containing foods give me a terrible headache. I don't know if shapagne (sp) contains sulfites, but this gives me the worst head aches of all. Usually a sublingual B12 (methyl...) helps a log.
Ok here's an update as to what my GI issues are, or at least the main culprits.
Gluten (duh!), Fructose (my recent finding) and drumroll please... stress/anxiety. Removing gluten and fructose pretty much allevieted most of the GI problems I've had. Oh and I also started taking digestive enzymes (Beano and some other one that has multiple enzymes) which has helped with the final gas/bloating with some foods.
The stress/anxiety issue is one that I am still working on and appears to be the only remaining issue that blocks me from living a normal healthy life. Though every once in a while I think something slips in my diet (I'm thinking an unknown gluten source) that puts me back at square 1 for a day or two. But I'm back to 100% after that.
Most everything showed no reaction, but let's look at what showed a reaction.
Low Reaction - Whey (protein in dairy) and Almond
Moderate Reaction - Gliadin (Wheat) and Whole Wheat - Both were closer to High than Low reaction
High Reaction - Gluten (Wheat), and Rye
And what, quite curiously, is missing with regards to reaction. Barley and Oat. Given more info about celiac/gluten and oats not being a problem, I might just have to try an oat that is known for being gluten free (no cross contamination). I thought for sure my reaction to dairy would be higher though, perhaps it's only a lactose reaction or perhaps I'm just sensitive to the low reaction of whey.
It's pretty cool that it matches very well with the data from Enterolab. Being that I showed reaction to gluten, but no reaction to soy, egg, casein in both this test and in the stool test via Enterolab.
It also appears that I might have to give eggs another chance now and test soy again.

1) Inflammation as shown by increased Calprotectin levels. Though I expected that it would by only high within range, it is out of range high, but not extreemly high.
2) They couldn't find any Bifidobacterium. Not a good thing from my reading thus far. This is huge, the bifido should outnumber any of the other bacteria tested for and I was high in E Coli (the good ones) and Lactobacillus (also good). I have read that IBS folks and older folks have fewer amounts of this bacteria which can lead to disease. I cannot for the life of me figure out why they found NONE though, this is scary.
3) The ratio of LCA/DCA was going in the wrong direction. I should have more DCA than LCA, but I'm the opposite. Don't know why, but some articles have show that this can lead to colrectal cancer. Not good.
4) Some of the other bacteria that are supposed to be at lower levels are higher than they should be, but not to the pathogen levels. Most likely due to the low/no amounts of bifido.
5) Though the lab showed my Pancreatic Elastase 1 to be not too low the Dr mentioned that it was still not as high as what it should normally be.
Nuts, greens, beef, fruits, all things that would bother me!! Nuts are high in fiiber and might be upsetting your system a little.
Fruits like peach, organges, and bananas cause some people problems especialy the acidic fruits. Maybe try applesauce - unsweetened.
This diet wont work right away. It took me 2 months to see noticable changes.
In the begining I ate lots of chicken, rice, potato, bread made from rice flour, chips totally out at first as well with beef. Salmon, mackrel, and other fresh fish is great to eat for an upset GI especially salmon becuase of the Omegas and soothing oils etc. I pushed it in the begining and ate GFCF (but with soy) Vans waffles which I could have waited on.
Breakfast: rice cereal, or eggs, lean bacon if you can handle it, but no fruit early in the morning (if you eat fruit eat it with something else so that all those sugars arent fermenting away), and Kinnikinnick makes great english muffins which are very soothing.
Lunch: rice wrap with some kind of meat (chicken, pork, turkey) with rice or little lettuce and smattering of mayo. Maybe by some rice crackers or GF ricecakes which are easy to digest.
Snack- bowl of rioce with some verry well done greenbeans or squaas. Maybe a piece of meat, mashed potato, some health food stores have GF rice noodles that taste just like pasta- good for carbs and calories
Dinner- meat/fish, rice/potato, applesauce or a well done veggie, and maybe something a little sweet for desert- you can make some easy peanutbutter cookies, or a cake, banana muffins were my favorite that I lived off of... just make sure the bananas are ripe ripe!

Dont lose hope- it takes a while but when you see improvement it is grand. Like me been GFCF for 7 months and I see huge changes from June when I started- there are setbacks for days or a week at a time but dont get mad just pull through and keep a diary of the food you eat so you can see what makes you feel bad etc. Also make sure you are not getting glutened if you live in a house with gluten foods.
