Paleo Convenience Food

Hi Cavedwellers!

Guess what!? I just learned about some paleo convenience foods. Farmer's Market makes 3 different cans of organic pureed veggies: sweet potatoes, butternut squash, and pumpkin. I called the company and learned that there is nothing added to the cans - no salt, preservatives, etc. Of course, it will be more expensive than fixing the veggies from scratch, but that is why you pay more for convenience. And these 3 veggies take a lot of time to make from scratch.

Imagine! You could open a can and have it for a snack. Yum......sweet potato with some pumpkin pie spice or a dab of maple syrup - heated briefly in the microwave, for example. Or you could make a pumpkin/sweet potato soup in a few minutes.

The brand is available at most Whole Foods or Wild Oats stores......plus a lot of small nat'l food stores. I'll be looking for it.

Hmmm. Is the pumpkin different from the "one pie" brand of pie filling? I think (and don't have a can on hand to check right now) that the only ingredient listed on the pumpkin pie filling is pumpkin (i.e., no preservatives). So that might be a cheaper brand.

Kayla has been taking an after school cooking program. She came home with potato and sweet potato spears that had been coated in italian dressing and then baked. I'll have to find the recipie to post here (I know she brought it home). Gave a nice twist to the french fry, were baked so heathier in that aspect, and italian dressing is easy to replicate with ingredients that we can all tolerate.

Probably so. Farmer's Market also makes a pumpie pie filling (that contains other ingredients) in addition to the plain pumpkin puree.

Morning Polly,

I will be on the lookout too. The pumpkin in the can does just fine for me but the other 2 do take time to prepare - especially the BN squash.

For chocolate lovers - I just found a brand new Larabar that is Chocolate Coffee and I think it just may fill the bill for some of us who are so intolerant of ingredients. It has the following ingredients: Organic Dates, Organic Walnuts, Organic Hazelnuts, Organic Cocoa Mass, Organic Cocoa Powder, Organic Cashews, Organic Coffee.

Polly? Could this do you for a chocolate treat? By the way, what is cocoa Mass?

They are awesome.

Well, I just picked up a couple cans of Libby's pumpkin pie filling and the only listed ingredient is pumpkin. So you might find some of those pie fillings at your local store too that are okay. Looked at the lemon cream pie filling, but alas it was thickened with wheat flour. I've shyed away from BN squash because of the prep time. But I also don't have a good "whole foods" type market near by either. May be time for another trip to the Dartmouth Food Coop. They had some stuff, but not enough gf the one time I went to make it worth a separate 40 minute 1-way trip.

Polly and all-

Things have thawed out enough finally that I was able to walk over to Wild Oats yesterday navigating unshoveled walks and great puddles. Only fell once. No harm done just good and wet. They did not have the brand you mentioned but will keep an eye out for it. I do most of my shopping at Safeway or a small local market since it keeps the $$$$$$ down but it is fun to wander the isles of Wild Oats on occasion.

I cook my butternut squash in a pressure cooker. It takes maybe five minutes to peel, seed and cut the squash into one inch pieces, five minutes for the cooker to come up to pressure and fifteen minutes cooking resulting in creamy soft squash. The pressure cooker is great for soups stews and stocks as well. Google around it might work for you and ease up on cooking duties

Hmmm...pressure cooker? Another new toy I could consider! I got a food processor for christmas and haven't figured out what to do with it yet (although I have ideas...just haven't gotten around to them). We also splurged on Saturday and got a mandolin for slicing things. I'm dying to try Matthew's potato and apple conconction.

Of course if I keep getting new kitchen toys, I really will have to talk Geoff into an addition! We figure the kitchen will need to be redone (actually it needs to be redone, we just have higher priorities right now) in about 10 years. We had to buy all new appliances when we bought the house (in the first year) so the biggest issue is the layout and counter space....Not a planned kitchen!
